Beer Battered Tofu using New Belgium Beer

Hooray for a good day at work! I was able to get away from my desk for a little while and work with the public, which I’ll admit can either be really fulfilling for me or really frustrating. Luckily, it was fulfilling. It was nice to get away from my desk too.

Breakfast this morning was Eggo fiber plus calcium frozen waffles and a coffee. My coffee tasted excellent and I think the trick is sticking to Starbucks coffee when I make it at home. I really have only found a few other brands that even come close in flavor. I know some people don’t like Starbucks and think it tastes burnt. I also like Peet’s coffee, which is based in California, but you can find their beans at the Fresh Market. That’s the strong coffee that got me through grad school!

At work, I snacked on a banana because I had wanted to eat it for breakfast, but knew it wouldn’t fit in my little tummy so I chose to eat it around 10 a.m. with some raw almonds.

Lunch was a Bruschetta Boca burger on an Arnold’s Thin, an apple and two peanut butter girl scout cookies.

After work, I went straight to the Metro Market grocery store in downtown Milwaukee and picked up some ingredients for my dinner.

I made beer battered tofu for dinner using New Belgium Mothership Wit beer and Bob’s Mill cornmeal.

I literally came up with the idea for beer battered tofu as I laid in bed the other night, thinking of what I could make for another New Belgium beer recipe. This recipe is one that I didn’t create on my own, but had to adapt from here. Like the person who posted this recipe, I don’t like fish, so that is why I wanted to make beer battered tofu.

* 1 (16 ounce) package of drained firm tofu (firm works well, but extra firm will make it easier to handle) or 1 (16 ounce) package extra firm tofu (firm works well, but extra firm will make it easier to handle)
* 1 (12 ounce) can cheap beer
* 1 1/2 cups flour (I used whole wheat, but regular white works too)
* 1 cup cornmeal
* 1 tablespoon paprika
* 1 tablespoon garlic pepper seasoning
* 1 tablespoon parsley
* 1/4 teaspoon salt
* 1/2 teaspoon garlic powder
* 3/4 cup canola oil
* tartar sauce or sweet chili sauce

Directions:
Prep Time: 10 mins
Total Time: 30 mins

1. Mix beer and flour in a bowl until you have a thin batter. Sometimes this uses more or less flour. Just adjust until it looks like a thin pancake batter.
2. In a second bowl, mix remaining 6 ingredients.
3. Cut tofu into 1/4 inch thick slices. I got about 10 or 12. Place slices on 1 piece of paper towel then place a couple of paper towels on top of the slices and pat to dry a little.
4. Heat oil in heavy skillet or cast iron pan until one drop of water splashed in spits around the pan.
5. Carefully dip slices of tofu in beer batter shaking off the excess. Place in cornmeal mixture and tap each side to get coating to stick.
6. Place in hot oil and fry until golden about 3 minutes each side. Remove from pan and place on paper towels to drain.

7. Serve with tartar sauce or sweet chili sauce.

It tasted yummy and was oh so appropriate for this week’s British fever with the royal wedding. I seriously LOVE tartar sauce and it’s such a shame I don’t eat fish to enjoy it more often. I even dip french fries into it when Craig gets fish and chips at a restaurant.

Since my stomach has still been acting up, I felt really full after eating tonight, but dragged myself to the gym. I was excited to workout, but my body didn’t feel the same way. I was bloated and my legs felt so heavy when running on the treadmill. I cranked out 2.0 miles exactly and walked for a warmup and cool down, so I did a total of 24 minutes. I also lifted a few weights, including free.

Once I got home from the gym, I had to meditate right away and here I am blogging late tonight, around 9, so it’s off to relax a bit and then get ready for bed.

If you use WordPress–be aware that they must have changed something because I just noticed that my “allow comments” button wasn’t checked like it usually is automatically. Ever since they adding this “writing helper” widget at the bottom of my post, it must have changed something.

Yoga before running = success!

Happy Thursday everyone! Hope you all have fun plans for Easter weekend. I took off of work tomorrow because my husband has off and I just needed a mental health day.

My breakfast-I didn’t feel like making stovetop oats today, we didn’t have much in terms of cereal selection, so I improvised. I made an egg white, cut up some grape tomatoes, and had a peach chobani yogurt. I used almond milk in my coffee today and it tasted good, so that might be my new replacement for half and half.

Couldn’t resist taking a picture of this. I received it in a free sample I received in the mail from International Delight (well from Vocalpoint). My happy time was obviously 5 p.m. for the day because I would be home from work by then and today is my Friday!

I was really craving a coffee at work, but I resisted and had a peppermint tea instead. My snack was a Cran Bran Vita top. I started eating and then decided to warm it up in the microwave. Smart move because this improved the flavor immensely! I am going to warm up or toast the vita tops from now on. Loved the Cran Bran flavor.

Lunch was a Morningstar black bean veggie burger on an Arnold’s Thin, string cheese and some applesauce. Dessert was a hershey’s chocolate bunny from a co-worker.

After work, I went to Target and was so excited to check out the expanded grocery section of the Target I pass on my way home from work. I know, I am a total Target and foodie dork. At least I know this and can admit it. The new sections of the store were laid out and lit so beautifully. They had a lot of (cheap) produce and their prices on Chobani weren’t bad either. I was only disappointed at the fact that they didn’t have the big Chobanis. Oh and I found Bonne Maman wild blueberry preserves at a good price too. Score!

While there, I used a free coupon for Bagel Thins that I received from the company and got a package of whole wheat flavor.

Loved the flavor of the bagel thin and the fact that it was only 110 calories.

Dinner was a bagel thin with ham, swiss cheese and a side of strawberries.

Then it was off to yoga for an hour! It was a good class, per usual. I felt strong and flexible today, but my back did ache during the class and the stretching helped a lot.

After class, I wanted to go on the bike and read a magazine. Both of the bikes I prefer were taken, so I improvised and threw the biking idea out the window. Instead, I did what I was supposed to do in my 10k training schedule and I ran for 25 minutes on the treadmill and walked for two minutes. I covered 2.18 miles and I felt so strong and great. Like the subject of this post says, maybe yoga before running equals success!? If that’s the case, I better do yoga the morning of my race to stretch everything out!

At the gym, someone was watching Sex and the City on TV and I instantly wanted to watch a couple of episodes. I knew what I was going to do when I got home! I couldn’t wait to pop in the second season.

And now I better go catch up with Miranda and Steve and watch their first encounter! Were you ever obsessed with Sex and the City like I was? I have all of the seasons on DVD except season five I think. It’s fun watching the episodes this evening because I haven’t seen the show in a while and it’s like they are all new to me now.

Lovin’ my rest day

Even though I loved having a runner’s high yesterday, I’m loving my “rest day” from the gym. Sometimes it just feels good to come home, take my time making dinner and rest by reading and plopping my butt on the couch. I won’t lie though–I am really looking forward to yoga tomorrow night. It may mean that I switch my 25 minute run to Friday, but it’s way worth it because my body needs yoga badly this week.

I am so excited that tomorrow is my Friday! This week flew by! :)

Breakfast–cereal and coffee. Same old stuff you’ve seen on here for weeks!

Lunch was a peanut butter and jelly sandwich, lots of carrots, red peppers and a peach chobani. I finally got some veggies in my lunch box and they tasted so good. I couldn’t believe I polished off all of those carrots. I think it was a total of three chopped up? Crazy, huh!

I ran to Aldi after work and stocked up on lots of produce so I could make a yummy dinner!

Oh and I got some string cheese, so I had to snack on that when I got home. Seeing string cheese in the fridge tonight made my husband so excited. Our cat Karma also loves it when we open string cheese wrappers. He’s crazy and will run up to smell the wrapper and hope we drop some cheese on the carpet.

When I meditated tonight, I had to add five minutes onto my 20 minute routine and breathe before my actual meditation session. 25 minutes twice a day sure adds up, but hopefully it will help me in the long run.

Dinner was a salad with grape tomatoes, sunflower seeds, tofu and a bit of mozzarella shredded cheese.

I marinated half of the tofu in Frank’s red hot sauce and some Penzey’s spices.

Dessert was a Moser Roth english toffee milk chocolate bar from Aldi. Do you like to shop for produce at Aldi? I realize I have to watch what I buy there in terms of packaged foods (hello, high fructose corn syrup), but I love their prices on produce. I didn’t have luck with fruit tonight in terms of quality, but there were some good veggies to choose from.

Aaah, sleep, I love you

I slept in this morning and it was glorious. After a week of feeling really tired as a result of not getting enough sleep, it felt so good to sleep until 8:45. I forced myself to stay in bed that long because I have to stay up until midnight for work. The kitties were all cuddled up next to me and it’s hard to get up with them in our bed.

I lounged around a bit this morning, ate breakfast and then finally got myself to the gym.

Breakfast was Chobani non-fat plain yogurt with sliced almonds, chia seeds, and honey.

At the gym, I lifted a few weights, biked for 20 minutes and then ran for 13 minutes. I pushed myself pretty hard on the treadmill and did some intervals to mimic running outside. I ran into a co-worker there and his talking about the event I have to work tonight kind of put me in a sour mood. I just want it to be over with.

I quickly showered and then made myself a Morningstar black bean burger on an Arnold’s Thin for lunch. I had red grapes on the side.

Taxes are done!

We had a storm come through last night, just as our bedtime rolled around, and it made for a very sleepy day! Glad to have the warmer temps, but not the thunderstorms that keep me awake!

Snack at work was a peppermint tea and a Pecan Pie larabar.

On my break, I read Crazy Sexy Diet and as I found when I was reading it before bed last night, I am really enjoying Kris Carr’s writing and am learning a lot from her! I knew nothing about pH levels before reading the last couple of pages.

I left work somewhat early to make it to a 4:30 class at the Y. Ultimate Intervals class was good. It used to be called Boot Camp, but they changed the name and we have a new teacher. You see, I didn’t attend Boot Camp for the last couple of months because I really hadn’t cared for the last teacher. The one we had today was enthusiastic and had good stations set up. It’s tough to make the class time though. I wish it was at 5:30 instead. We’ll see how often I attend because Mondays are busy for me at work.

After dinner, we meditated and then Craig and I finished our taxes and submitted them! Phew. One thing that we learned from doing them was that we aren’t so savvy with finances. We are good savers, but we don’t know how to invest our money. So, this prompted a new goal for 2011: take a financial class together so we are more financially savvy!

From finances, back to food–my sister-in-law is starting a new full-time job on Monday and she’s not used to bringing a meal to a workplace. I gave her some advice in an e-mail and told her to check out my blog.

Question for you readers: any tips for my sister-in-law on making healthy brown bag lunches?

My tips were to prepare veggies, etc. on Sundays and to cook extra of a meal and save some for work leftovers. I also said that fruit often fulfills my sweet tooth (like it did today) and that way I guarantee I get my fruit in for the day too.

California dreaming

Happy Tuesday! Can’t believe tomorrow is already hump day. This week is going to fly by! I’m looking forward to warmer temps in my neck of the woods and to some fun this weekend with friends.

Breakfast was an old favorite, Bonne Maman Wild Blueberry Preserves paired with Chobani non-fat greek plain yogurt. I used to eat Bonne Maman with yogurt sometimes three times a day when I lived in California and all of my tummy troubles started. Yogurt was what my body craved and I couldn’t get enough of this combination. Bonne Maman was cheaper at Woodman’s than any other grocery store I have seen it at, so I really should have picked up more than one jar!

Snack at work was some of my homemade granola bar and a Numi jasmine green tea. I must have been “California dreaming” today because this flavor of tea also brought me back to my days living in California. I was obsessed with Peet’s coffee and tea’s Jasmine Tea. I also loved running by jasmine bushes on my runs around Berkeley.

I enjoyed a ham and provolone sandwich on a french baguette with tomatoes, Frank’s Red Hot and spinach for lunch. Basically what I had for dinner yesterday. I also had a Pomegranate Chobani for the first time ever and it didn’t disappoint! Can’t wait to try Mango and Raspberry and then I think I will have tried every Chobani flavor out there. :) Red grapes were my dessert.

Although that lunch filled me up quite well, I had a craving for something sweet around 3 p.m. so I grabbed a mini chocolate chip cookie dough Larabar from my snack drawer.

Speaking of Larabars, my mom picked up some things for Craig and I at Sam’s Club today (we don’t have a membership) and I asked her to just see if they had Larabars there. They did! I got a combo pack of Apple Pie, Cashew Cookie, and Cherry Pie! 18 bars for $15.88 or something like that–a pretty good deal, huh? I told my mom to grab a flavor to try out for herself, especially since she’d never had a Larabar before, and she enjoyed the cherry pie bar tonight. She said it was different than she expected it to be, but it was good.

I got home from work, meditated, rested a bit and then made dinner.

After my stomach settled, I hit the gym and worked hard. I rowed, biked and did the Cybex Arc trainer. I like mixing my cardio up like this once in a while. I also did a full circuit of weights. I was stinky when I left there!

Now it’s getting late and there are dishes to do and blogs to catch up on.

So happy

I leapt out of bed this morning (after hitting the snooze button a couple of times) and was so happy to start my day. Note: I haven’t felt like this in ages. The vacation in two days is giving me an extra reason to be joyous! I love to travel and especially to someplace warm with my husband in the middle of this icky Midwestern winter. I don’t know why, but I kept singing “on the good ship, lollipop” to my husband and cats this morning. Yes, I am weird and admit it. I don’t talk about my weirdness on my blog much, but my husband and I can be quite quirky together and that’s what makes life fun. Anyway…must have had a dream about the good ship lollipop or something.

Breakfast this morning was the absolute last of Jessica’s gluten free granola in my favorite flavor. I saved the best for last and had the Vanilla Maple. :( I’ll have to make my own granola and look for Jessica’s at Whole Foods.

Lunch today was the pizza we had for dinner last night, a pink lady apple and two pitas with greek olive Sabra hummus. The hummus definitely was the key to filling me up at lunch.

After work, I changed and went straight to the gym. I did kind of what I did last night–biked for 18 minutes, walked/ran on the treadmill for 10, rowed for 5 minutes and lifted weights.

Plus this larabar. I plan on bringing a bunch of these on our trip, so I wanted to make sure I liked this flavor.

My food has been kind of random lately and it’s because we have been cleaning out our cabinets, fridge and freezer before this trip. For some reason, I just feel better doing that before a big trip and then we can start fresh with a big trip to the grocery store when we return.

I am off tomorrow so I can get a mini mani/pedi in the morning, head to the mall for a bit, pack for the trip, do laundry and clean up the house. Then it’s off to Florida bright and early on Friday morning!

More Zumba

Oh Friday, how I longed for you all week!

I started out my last day of the work week with a lot of Jessica’s chocolate chip granola. (I over-poured the milk on accident and had to compensate). I also had some cantaloupe because it has to be eaten up before it goes bad.

Lunch was a spinach salad with grape tomatoes, Athenos hummus, Athenos feta cheese, cucumber slices and green pepper. I also added a Musselman’s Granny Smith Applesauce and Dannon Activia Dessert yogurt in Vanilla Bean to my lunch bag.

My real dessert wasn’t that Dannon yogurt because it’s not very dessert like to me. Instead I tried the Raspberry Dark Chocolate attune bar out. I would say it is equally as tasty as the mint chocolate one.

When I got home from work, I quickly did a load of laundry, some dishes and cleaned in general. I was clearly in a cleaning mood! I like to get as much done as possible before the weekend so I can enjoy it.

I snacked on some Pomegranate Newman’s Own Organics licorice.

Zumba tonight with Angie was fun! I can’t believe I did Zumba two days in a row. I feel like an addict. There were a lot of new songs and moves again.

Tomorrow morning, I am getting my hair highlighted, which will eat up half of the day because it’s at a beauty school. It’s half the price of a regular salon and I need to read The Girl Who Kicked the Hornet’s Nest anyway, so I don’t mind if it takes a little longer than normal.

From tired to energetic

The end of the week laziness set in last night, so I didn’t blog or make it to the gym. I just laid on the couch. I swear that my body shuts down on Friday nights and it’s impossible for me to do anything. Guess the week wore me out more than I thought it did.

I made up for the Friday night case of the lazies by having tons of energy today. I got up around 8, ate this breakfast:

I didn’t love this cherry flavor. I think I got strawberry last time and it was better. This tasted more soy like. I like my dairy yogurt I guess and if I was vegan or had lactose intolerance, I would choose soy yogurt over having no yogurt at all.

I went to the Y and hit the 8:45 yoga class. It was mostly flow, with some pretty difficult poses thrown in. It’s funny how much more difficult it is for me to do yoga in the morning vs. at night. My hips hurt and don’t feel warmed up at all in the morning. Some of the difficult poses really struck my hip area with pain.

After an hour of yoga, I still had tons of energy, so I hit the elliptical for 10 minutes, the rowing machine for a bit and then did a full circuit of weights.

I got home and still had more energy than I knew what to do with. Threw in some laundry, showered and ate lunch, which was a Morningstar black bean veggie burger, Irish cheese, tomato on an Arnold’s Thin. I also had a cup of cinnamon applesauce.

Then, I went to about 6 stores in an hour and fifteen minutes. They were all quick trips. I picked up a silicone swim cap so I can hit the pool soon and protect my hair.

I went to Sears to check out the Golla camera bag I want to get before our trip to Florida. I had only seen it online, so I wanted to check it out in person.

I liked it a lot–it’s stylish, roomy, and looks like it will be comfortable to carry. I took pictures of how the bag secures with a strap on the side and a Sears worker came over kind of looking at me suspiciously.

I explained to the worker that I had been researching the bag online this morning and talking to my husband about the different features. I was explaining how the bag secures magnetically in front and with the side strap, but my husband didn’t think that sounded very secure. He was concerned someone could just come along and open it up when I wasn’t looking. The Sears worker didn’t seem to like the bag I chose and showed me a very standard DSLR case. I explained that I liked the one I chose because it didn’t look like a camera bag and he said “no, it looks more like a lunch pail.” I argued back that it looked more like a purse and didn’t scream “DSLR camera bag” or tourist. It cracked me up that he used the word “pail” and gave my husband a good laugh when I got home and told him about it! I guess my opinion is sure to be a little different than that of a 50 something year old man!

Anyone have a camera case that is stylish and cute to recommend? I am about 90% sure I will go with the Golla, but then I feel bad if it looks to feminine for my husband to carry. I take all of the pictures on our trips, but he often carries the camera because I deal with a purse. The nice thing about the Golla is that it has numerous pockets and areas for me to carry purse items in, so I may not even need a big purse.

And as I wrote this post, I was snacking on some Stonyfield blueberry yogurt with pom arils.

Quick meal recap from Friday, January 7, 2011.

Breakfast was stovetop oats with ground flax seeds, half of a banana and pomegranate arils. It was kind of blah, but filled me up.

I treated myself to my free lunch at work and got a grilled cheese with avocado, bacon and tomatoes. I had a cup of fruit on the side.

Review of Gardein Tuscan Breasts

It was “Friday” for me today since we have a three day weekend with New Years Eve tomorrow. I thought it would be an easy day at the office, but I volunteered to step away from my peaceful desk and help out in the public arena. It’s funny because my job title has public in it, but I rarely work with the public face to face! For two straight hours, I helped answer questions, shuffle people from one line to the next, etc. It was fun and the time flew. My workplace has been busy all week, which is wonderful to see, so I wanted our guests to have a positive experience despite the crowds. Helping out was rewarding, but it also made me appreciate my quiet desk, more or less because I am not used to standing in one place like that anymore. My body ached at the end!

This is where yoga class tonight came in to save the day! I just got home from there and I feel so much more relaxed and less achy. We did a couple of new poses tonight and always like trying new things in fitness classes, so that was cool. We concentrated on lots of twists, which our teacher said was good for our backs and digestive systems. This was perfect for me and especially for the day I had.

At yoga, I also got to try out my new GAIAM yoga socks that Craig got me for Christmas!

They worked really well. The room wasn’t as cold tonight. Despite that, I loved that my feet were warm and the grippers on the bottom helped me stay more stable, especially in certain positions. When I put them on, it was hard to separate my toes, but then I sort of forced them into their spaces and it was fine.

Lunch

I had an Arnold’s Thin sandwich with provolone cheese and sweet peppers on top. I added Frank’s Red Hot sauce and Chipolte mayo. Other lunch items included two clementines (I am trying to use them up), a strawberry Chobani yogurt, and baby carrots.

After work, I went to Whole Foods to use up a bunch of coupons for free or discounted items. It was packed there like it was at my work. Must be the New Years eve rush. Among other things, I picked up three different Gardein items, which I had never tried before this evening. I asked Gardein if I could sample some of their products and they graciously sent me some coupons.

We both enjoyed the meal, but I loved the flavor and texture more than Craig. I would definitely buy the Tuscan Breasts again.

I eat a mostly vegetarian diet and even though I like the flavor of chicken, I don’t necessarily like eating animals, nor does eating meat always agree with my stomach. I like that one of these tuscan breasts has 21 grams of protein because I definitely know that I need more protein in my diet.

Time to start a book I picked up at the library tonight, My Spiritual Journey by The Dalai Lama. I’ll share more on this tomorrow, but one of my goals for life in general is to read more books. I love reading, but have been slacking lately on reading books. I got hooked on the Stieg Larsson books a couple of months ago, but since then, I haven’t been as “hooked” on reading. Maybe I should blame my addiction to reading healthy living blogs? :)
