Fiber and green tea

I forgot to share the wonderful news I got last week! Now, let me preface this by saying that I never quite understand what the results of medical tests mean.

My final lab tests came in from my colonoscopy and EGD that I had back in November. Everything came back normal and great. No ulcers, polyps, pre-cancer bacteria, no colitis showing up, etc. The doc wants me to get tested for celiac sprue, which I had done in 2004 and that lab came back negative. I am still not sure if that one negative lab test will reassure my doc that I don’t have Celiac Disease and I need to call the doctor’s office and ask. At least I had my old lab results sent over to them and that’s done.

My gastroenterologist also wants me to make sure I am getting enough fiber in my diet, so that is one of the reasons I started tracking my food with MyFitnessPal too. I am happy to say that I am definitely getting enough fiber and enough protein so far (which I was worried about since I eat a mostly vegetarian diet).

I bought some Fiber One honey clusters cereal this week and it’s pretty good. I put a banana in it and that helped with the flavor. I need to eat bananas when they are still a tad green on the end as I like them much better that way!

Because it’s so good for you, I am trying to drink more green tea. Yesterday, I had a cup mid-morning with a lovely little unexpected snack of a pumpkin spice apple pie that my co-worker’s wife made. It was delicious and such a great combination of flavors.

Lunch today was half of the pictured leftover butternut squash risotto from Trader Joe’s, carrot sticks and a Stonyfield Oikos blueberry yogurt. I snacked on the clementine later in the afternoon. It was a very orange lunch!

I made the risotto for dinner last night and it was ok. I don’t know if I would buy it again because I am not sure I am that wild about butternut squash.

After work, I had to go to the store to get some electrolyte drinks for Craig. He has the flu (for the second time this season) and had a very bad day. Poor guy. I feel so bad for him, especially because he can’t seem to sleep and rest when he’s sick.

At the store (Aldi), I picked up a bunch of produce so I could make a yummy salad for dinner. It was just what I wanted to eat before yoga. I also made a smaller salad to bring to work tomorrow.

I put artisan lettuce in it, cucumber, turkey, provolone cheese, roma tomatoes and I topped it with goddess dressing.

I hadn’t been to yoga for about a month and it felt so good to practice again tonight. Of course, class was sooo crowded with the January joiners, but we all fit and worked around each other.

What I’ve Been Eating This Week

I’ve been taking pictures off and on this week and thought I would share some of them tonight because I wasn’t falling asleep on the couch, was in the blogging mood and I miss blogging.

On Monday, I went to my sister-in-law’s Pampered Chef party. She was celebrating a beautiful new kitchen remodel.

We had some kind of cinnamon bun with apples, guacamole and chips, bean salsa, brie and preserves with toasted baguettes, and cream cheese/preserves with crackers. I also had a glass of margarita mix.

My mom bought two items and I bought a 4 qt. collapsible bowl with a lid. This will be perfect for potlucks, parties, and for storing food in the fridge. Plus, with a tiny kitchen (wish I had a remodel like my sister-in-law and brother, but that would take expanding our house), I need all of the collapsible items I can get!

Lunch was a turkey wrap with lettuce, goat cheese, and tomatoes. I wasn’t too keen on the goat cheese flavor. Yuck. I have had it before and it didn’t seem to irritate me so much. Oh well!

Snack before the gym tonight was a whole wheat tortilla with chunky Barney Butter and a banana. This actually ended up being my dinner because it filled me up and after the gym, I wasn’t very hungry.

I’ve been reading Eating Animals on the kindle.

I am finding aspects of it quite grotesque and yet, very educational. I keep thinking about eating meat and finding it grosses me out. Even getting a turkey wrap today was difficult, but I needed some protein.

I’m watching Modern Family right now and never got into it last season, but figure I’ll give it a chance this fall.

Can’t believe it’s Thursday already tomorrow! Hooray for the week almost being over! :)

Last night, I didn’t have time to blog because I literally went home from work, meditated, and then cooked up some tofu on the stove, ate dinner and ran to the mall to meet my mom to see this movie during a free preview.

The movie was just ok. My mom enjoyed it and I think most of the older crowd in the audience did. I thought it was predictable and the story wasn’t one that I could relate to (unemployment, foreclosure, divorce), nor do I want to face those subjects when I go to the movies. I like to escape the bad news of the state of our economy, not face it head on. Definitely a rental–I wouldn’t recommend going to it in the theater.

Yesterday’s meals and fitness:

Breakfast–cinnamon raisin bagel thins with cream cheese. I used the last of my coupons to review these courtesy of Thomas and I loved this flavor. I prefer the thins over huge bagels now. They are great for sandwiches and perfect for breakfast.

Lunch was a Morningstar black bean burger, red pepper slices, a vanilla activia yogurt and a string cheese.

I got my workout in during my lunch break doing our 45 minute yoga session. I spoke to the teacher before class and it turns out that she teaches at my YMCA like I thought she did and then when I mentioned the yoga teachers I like there, she said that one of them is her mom! It all clicked because they look and speak alike! The thing I like best in their similarities is that they both like to put scented towels over our eyes during the rest session at the end. Our scent yesterday was lavender-which was fabulous!

I did miss doing some cardio and strength training after work though. :(

Dinner was tofu with Penzey’s Mural of Flavor again, a blueberry chobani and Pomegranate Green Iced Tea from Trader Joe’s.

Are you looking forward to seeing any particular movies this summer? I am most interested in seeing The Help. I guess I am behind on what else is coming out, so The Help is all I can think of. I really want to read The Hunger Games and then see that movie, but I don’t know its’ release date. The hubby is reading it now on his kindle and then I will get to it next!

ABSolutely going to be sore

Hips Abs Butt Intense Thighs (HABIT) class killed me tonight. The teacher set up different exercises than we did last week and they were great and effective ab exercises. We focused more on obliques tonight using hand weights and the step. I am going to be hurting over the next couple of days!

After dinner, Craig and I also went on a walk around the neighborhood. It was a shorter walk because the weather turned suddenly cool and windy.

I have been distracted by etsy for the last half hour. You see, I am not the quickest decision maker when it comes to pretty things from etsy. I have been trying to pick out the best coupon organizer for weeks now. I secretly keep hoping someone will pop up with an Amy Butler fabric coupon organizer. Have you seen her fabrics? They are beautiful!

It’s already getting late here…so a quick post will follow with my eats.

Beer Battered Tofu using New Belgium Beer

Hooray for a good day at work! I was able to get away from my desk for a little while and work with the public, which I’ll admit can either be really fulfilling for me or really frustrating. Luckily, it was fulfilling. It was nice to get away from my desk too.

Breakfast this morning was Eggo fiber plus calcium frozen waffles and a coffee. My coffee tasted excellent and I think the trick is sticking to Starbucks coffee when I make it at home. I really have only found a few other brands that even come close in flavor. I know some people don’t like Starbucks and think it tastes burnt. I also like Peet’s coffee, which is based in California, but you can find their beans at the Fresh Market. That’s the strong coffee that got me through grad school!

At work, I snacked on a banana because I had wanted to eat it for breakfast, but knew it wouldn’t fit in my little tummy so I chose to eat it around 10 a.m. with some raw almonds.

Lunch was a Bruschetta Boca burger on an Arnold’s Thin, an apple and two peanut butter girl scout cookies.

After work, I went straight to the Metro Market grocery store in downtown Milwaukee and picked up some ingredients for my dinner.

I made beer battered tofu for dinner using New Belgium Mothership Wit beer and Bob’s Mill cornmeal.

I literally came up with the idea for beer battered tofu as I laid in bed the other night, thinking of what I could make for another New Belgium beer recipe. This recipe is one that I didn’t create on my own, but had to adapt from here. Like the person who posted this recipe, I don’t like fish, so that is why I wanted to make beer battered tofu.

* 1 (16 ounce) package of drained firm tofu (firm works well, but extra firm will make it easier to handle) or 1 (16 ounce) package extra firm tofu (firm works well, but extra firm will make it easier to handle)
* 1 (12 ounce) can cheap beer
* 1 1/2 cups flour (I used whole wheat, but regular white works too)
* 1 cup cornmeal
* 1 tablespoon paprika
* 1 tablespoon garlic pepper seasoning
* 1 tablespoon parsley
* 1/4 teaspoon salt
* 1/2 teaspoon garlic powder
* 3/4 cup canola oil
* tartar sauce or sweet chili sauce

Directions:
Prep Time: 10 mins
Total Time: 30 mins

1. Mix beer and flour in a bowl until you have a thin batter. Sometimes this uses more or less flour. Just adjust until it looks like a thin pancake batter.
2. In a second bowl, mix remaining 6 ingredients.
3. Cut tofu into 1/4 inch thick slices. I got about 10 or 12. Place slices on 1 piece of paper towel then place a couple of paper towels on top of the slices and pat to dry a little.
4. Heat oil in heavy skillet or cast iron pan until one drop of water splashed in spits around the pan.
5. Carefully dip slices of tofu in beer batter shaking off the excess. Place in cornmeal mixture and tap each side to get coating to stick.
6. Place in hot oil and fry until golden about 3 minutes each side. Remove from pan and place on paper towels to drain.

7. Serve with tartar sauce or sweet chili sauce.

It tasted yummy and was oh so appropriate for this week’s British fever with the royal wedding. I seriously LOVE tartar sauce and it’s such a shame I don’t eat fish to enjoy it more often. I even dip french fries into it when Craig gets fish and chips at a restaurant.

Since my stomach has still been acting up, I felt really full after eating tonight, but dragged myself to the gym. I was excited to workout, but my body didn’t feel the same way. I was bloated and my legs felt so heavy when running on the treadmill. I cranked out 2.0 miles exactly and walked for a warmup and cool down, so I did a total of 24 minutes. I also lifted a few weights, including free.

Once I got home from the gym, I had to meditate right away and here I am blogging late tonight, around 9, so it’s off to relax a bit and then get ready for bed.

If you use WordPress–be aware that they must have changed something because I just noticed that my “allow comments” button wasn’t checked like it usually is automatically. Ever since they adding this “writing helper” widget at the bottom of my post, it must have changed something.

I didn’t have the best experience babysitting my nephews last night.

Let’s just say they were awfully naughty and one of them even ended up in time out twice. I am glad my brother and sister-in-law got out of the house and were able to go to dinner with friends.

We also played Sorry, which I was sorry we did because the 5 year old didn’t want to follow the rules.

I guess my attitude wasn’t helped by the fact that I was very sick with tummy troubles.

I had a banana to eat there. I traded my usual placemat for eating at my nephew’s. :)

I also had a Dannon vanilla yogurt and a peanut butter sandwich later on at night when the 5 year old wanted to eat at 9 p.m.

This morning, my stomach still hurt, so breakfast was somewhat simple. Just Honey Nut Cheerios and coffee.

Then I hit the stores for some food. I went to a very busy Sam’s Club and ended up with some good deals. I picked up Chobani yogurt, Bolthouse Farms Strawberry Banana juice, chicken and beef fajita strips for Craig, feta cheese, Stacy’s pita chips, tortilla chips, strawberries and raspberries.

I was really disappointed because I went to a Pick N’ Save (grocery store) that didn’t carry any organic yogurt. I asked a store person if I was just missing the separate section and she said they didn’t carry any. How weird that most Pick N’ Saves separate organic dairy from the rest anyway. I told her “probably this market, huh” and she agreed. Guess West Allis isn’t an organic market yet! I had some Stonyfield coupons from an Earth Day e-mail I got yesterday and I went to the store all excited to buy some yogurt. Oh well! Guess I won’t be going to that location too often.

Whenever my colitis acts up, I am super hungry for days. I was ready to have lunch right away when I got home, so I made a salad with cucumber, red pepper, tomatoes, & feta cheese. I also had a strawberry Chobani and added fresh strawberries, Bonne Maman wild blueberry preserves, and Kashi Summer Berry granola to it.

Time to get something done here. Or I should really force myself to read a magazine and relax! I have been going non-stop the past two days. I plan to go to the gym later and then to watch Eat Pray Love tonight.

Inspirational lunch: Eat Well, Live Well

It’s my Friday today because I am off of work tomorrow! Woo hoo! I took off because I have to work about 5 hours on Sunday for an event.

I started my day with Chobani plain non-fat greek yogurt and added the Bonne Maman wild blueberry preserves.

Before I left my building to go to a lunch, I had a pineapple Chobani for some protein. As I tweeted earlier, this girl doesn’t normally love pineapple yogurts, but I was quite please with the Chobani version. I wasn’t sure what to expect from the luncheon I was going to, so I thought I would play it safe by having this yogurt.

I walked about a mile from my work to the Grain Exchange for a “Eat Well, Live Well” luncheon. The luncheon was provided by the Susan G. Komen Southeast Wisconsin Affiliate and the Cancer Treatment Centers of America.

I enjoyed walking through downtown Milwaukee, even though it was pretty cool out today.

I passed Ziedler Square, which is the location for the farmer’s market I frequent on my lunch breaks in the summer months.

I hadn’t been in the building since my junior prom, so it was fun to be back in the beautiful room I was last in as a naive 16 year old.

Upon arriving, I was greeted with a cute pink reusable bag, which contained a cookbook! The recipes in it look really good. Can’t wait to try some of them out and post them on here.

Each table had a basket as a center piece with food the speaker would later talk about and ask for audience participation on. Ours contained flaxseeds and granola.

My entree was a grilled tofu with a bed of greens and grilled vegetables. So good! Makes me want to get out the George Forman more to grill vegetables and tofu!

Dessert was even better. Fresh berries galore with cream on top.

And to kick it off, they really pampered us with chocolate covered strawberries. (I didn’t eat the whole plate, I just had one).

While I knew a lot of what the speaker was talking about, I also learned some things. I took notes on my iPod touch, so I will share some of them tomorrow if I can make sense of what I typed into my electronic note pad! She shared how a lot of the foods like kale, flax seeds, spinach, carrots, broccoli, etc. can benefit your breast health and why.

I left work early today to take my car in for a couple of services. I had to get an oil change, my tires rotated and a recall done on my low beams. Unfortunately, I was meant to have a shuttle take me home and it never did (I blamed it on all possible drivers too busy watching the Brewers lose). I hung out in the Honda dealership waiting room, used their wi-fi, read my book until everyone was booing that the Brewers lost at the last minute and then my relaxation got ruined when my service person called me, thinking I was at home. She came over with the obvious bad news that always comes with getting routine services done. I needed new tires, a new battery and my wiper blades were all shot. I only chose to get the oil change and the rear wiper blade replaced. I know that I can probably get better prices on the tires and definitely the battery elsewhere. That news ruined my afternoon. Just when I am about to pay off my car next month, here goes putting some money into it! Oh well!

I wasn’t too hungry when I got home and made a green monster smoothie for Craig and I with some of the foods the RD mentioned in her talk today! I put baby spinach, pineapple, skim milk, soy protein powder, & a bit of orange juice in it. The orange juice kind of ruined the flavor, so I won’t use that again in a green monster.

Tomorrow, I am running a few errands to Kohl’s to get a bridal shower gift and look around and Wal-mart to pick up our TurboTax software (yes, we have not done our taxes yet). I’ll probably hit the gym for yoga in the morning, so I skipped it tonight.

And finally, a big CONGRATS! to my sister-in-law (also named Lisa) who got offered a job today that is full time with benefits! All of our efforts in helping her with her interview skills paid off big time. I am sure it was also that she just did well on her own too, but it was her first big interview ever! We are so happy for her great news!

Snow snow, go away

I had a snowy ride into work today–I did not enjoy waking up to see snow on the ground and big flakes in the air. When is this winter weather going to end!? I am ready for flip flops, spring coats, walks around our neighborhood and biking outside.

Today’s work day was good. I was dependent on others to get tasks done and most of them were accomplished today, a day early. Love when that happens.

I started my day off with Eggo nutri grain whole wheat waffles and a banana.

Snack at work was a trail mix bar, a kit kat and a latte.

Lunch was a whole wheat tortilla filled with pintos, a bit of cheese and red peppers. I also had more carrot sticks, red peppers, an applesauce and an Athenos strawberry greek yogurt. My verdict on these greek yogurts is that I do prefer Chobani over Athenos. I don’t think I am a big fan of the separate fruit filling that you have to mix in. Don’t know why, but it seems that Chobani’s blends better.

After work, I picked up Craig and we got dinner. He was getting his oil changed. His idea of the perfect dinner was McD’s. Mine, not so much. I had a bite of his chicken sandwich and was truthfully grossed out. I opted to go to Panera bread and ordered a you pick two of french onion soup, a meditterean veggie sandwich and an apple. Much better! Tasted nice and fresh.

My husband went to a basketball game tonight with his sister and I was going to head to the gym and then relax. Unfortunately, I laid down for a bit and an hour and a half later, I had been out on the couch sleeping away like a baby. This is a sign I need to go to bed earlier once again.

Speaking of, I missed my workout today as a result. So, maybe I should become a morning workout person more regularly?

Rewind to yesterday afternoon and evening–I enjoyed an Awake tea with a pump of mocha (my friend told me she enjoys this combo and she was right, it’s tasty) and the new Starbucks logo was on my sleeve. I managed to get two cute t-shirts from Old Navy totally free (no tax or anything) because of a $10 coupon I got from my Banana Republic card. Now I get to spend that at Gap, BR and online too.

Then Craig and I went to the Guided Meditation class. It was interesting and I am glad we went. Basically, I won’t be using this type of meditation in the future, but I think visualizing through listening to a CD or podcast could work for some people over the technique I use.

We meditated a couple of times in class and during one of the sessions, I was transported to Bacharach, Germany, looking over the city and sitting in the vineyards.

Bacharach was the first stop on our honeymoon in Europe a couple of years ago and it holds a special place in my heart, so it’s no surprise that my meditation session that involved picturing a place resulted in me going there. Aaah, I wish I could go there right now to drink some riesling and eat riesling gelato (which I really did and it was delicious).

Anyway, back to reality. Bedtime is approaching and since one of my new goals is to get to bed earlier, I better go get ready.

Getting over the hump

Happy hump day! Only two more days and it’s the weekend. Is it wrong that I am already thinking about the weekend? It kind of stinks that I have to work on Sunday afternoon, but I’ll make the most of my Friday night and Saturday then.

Breakfast–plain old boring Cheerios and coffee. I didn’t feel like anything else.

Snack at work was Nescafe instant coffee that I got free samples of through Thunderfap.com or one of those sites. I also had an Aldi trail mix bar. This bar is a bit sweet for me. I think I better look at the ingredients before buying again too.

Lunch was a whole wheat tortilla with refried beans, shredded cheddar cheese and of course, Frank’s Red Hot sauce. I also had a strawberry Chobani yogurt and added fresh blueberries to it. Dessert was a toffee Moser Roth chocolate bar from Aldi.

I meditated when I got home from work. Today, I practiced without my husband and I did well. I started out better than I did in the middle with controlling my thoughts. Don’t worry–I won’t talk about my meditation every day. I may just blog about any affects I have noticed from it over time.

Dinner was a banana with some nutella and breakfast taquitos. Blame my husband who buys those and was making them–I couldn’t resist the quick meal tonight.

I was going to go to the gym tonight, but decided I could really use a rest day to relax my body and also do dishes, organize coupons and read my book. I also had planned on (finally) leaving work early and then 3:30 hit and multiple e-mails came in that demanded my immediate attention. I wanted to go to Zumba, but that didn’t happen because getting out of work once again affected my workout schedule. And I wonder why I am counting down the days till the weekend.

When I was organizing my coupons, I realized I really need to find a good (cute) coupon organizer. Using the envelope system isn’t working so well right now. I think I am going to keep searching on Etsy.

So, it’s the part of the evening where Bill Bryson’s book is calling my name. Hope I don’t fall asleep while reading because I feel super tired right now.

Night!

It’s my lucky day!

I am off of work this morning because I have an event to work this evening until about midnight. I slept in a bit, even though our cats were trying their best to knock down the baby gates we use to block them from getting to our bedroom door.

I woke up, had my coffee and breakfast of stovetop oats with a banana and topped with sliced almonds, cinnamon and peanut butter.

For my morning coffee, I had to grind some whole beans and noticed something fantastic on my Starbucks French Roast package.

See it? When I finish using the whole beans, I can bring in the bag to Starbucks for a free tall coffee. It’s the little things in life that make me happy.

Speaking of little things in life, I was reading blogs on my iPod while eating my breakfast. I went to Tina’s Trading Up Downtown
and discovered I had won her “Tea for Two” giveaway! I scored a really cute teapot and some Sarabeth’s ceylon tea.

After letting my breakfast settle, I hit the gym. I did 36 minutes on the elliptical and then a few weight machines.

Well, here’s hoping that I maintain my good luck streak and that my event goes well tonight.

We don’t have any plans, but we will need to hit a few home stores to purchase organizational items for our house. My husband’s work wellness program allows him to purchase fitness gear up to $150 a year and his work reimburses him. For the month of February, we get to purchase certain organizational items for the house and they will reimburse for those! Sweet! We’ll need to get to Target, Home Depot and Bed Bath and Beyond. I doubt my husband will want to go to all three stores, but I won’t mind looking around somewhere like Bed Bath and Beyond all by myself, especially when getting free items to organize us.
