Weekend scenes

I can’t believe the weekend is almost over! I need an extra day off of work soon.

Here’s my weekend through less text and more pictures for the sake of time.

Was happy to get a package from White Girl salsa yesterday. I won some last year and it finally came. I was so sad to pick up the box and see stuff was leaking. Even more mad when I sliced my finger on a piece of glass, even though I was very careful opening the box.

After a shower and lunch, I was just as tired as my three boys. I read my book and fell asleep for about five minutes.

Traded in an empty bag of Starbucks beans for a hot cup of coffee. I was one of the few who didn’t get a love cup around Valentine’s day, so I was happy to randomly get one. I tried the blonde roast for the first time and I liked it. I usually like darker blends of coffee, so the taste of the lighter bean was different at first.

Beautiful Saturday for a B-day Cookout

Good afternoon! It’s a beautiful, sunny Saturday here in Southeastern Wisconsin. Probably nothing like the weather they are experiencing on the East Coast right now.

After clocking out of work at 12:05 a.m. and not getting to sleep until about 1 a.m., I slept in this morning, meditated, and went for a long walk with Craig. My legs were really sore from walking about 5 miles at work last night, but I think the walk actually helped a lot.

I really wanted to make it to the Eat Local Resource Fair at the Urban Ecology Center in Milwaukee, but walking around at a fair and being so tired after work last night didn’t sound like it would mix too well. Plus, I didn’t want to feel so rushed today.

So instead, I painted my nails this morning.

Eek, my nails/cuticles look like they need a proper manicure. Hmm…maybe on my b-day on Wednesday?

I won some Cascal fermented soda from Jessica at Healthy Living in America’s Dairyland. Never tried it before, but I will definitely let you all know how it is or you can head over to Jessica’s site to check out her opinion.

Then we went to Barnes and Noble to get my nephew a gift card. I’m glad he is getting into reading and I want to encourage it with this gift card. I definitely was very into reading at his age (going into 2nd grade) and now I am a lifelong reader. It also helped my spelling skills!

And to the grocery store to pick up some good deals.

I picked up two Protein Plus PowerBars that ended up being totally free with coupons I found in Women’s Health magazine.

I used a $1.50 off coupon for some Seattle’s Best coffee.

And I used one of my free Chobani coupons the company sent after I had a bad experience with a raspberry flavored yogurt a couple of weeks ago. Great customer service on Chobani’s part–I was impressed. Now I get to have one of my favorite flavors, pomegranate, for lunch this week.

I’m quickly writing this post while watching America’s Test Kitchen. It’s an episode focused on chicken, which is sort of grossing me out. I still like learning things from the show though, even when it is very meat based cooking featured most of the time.

We’re off to a cookout for my nephew’s 8th b-day party this afternoon! Can’t wait to sit outside and enjoy a hamburger. I think this flexitarian is actually going to have a burger and hope it doesn’t affect my stomach. I have been craving meat all week.

Moist and delicious banana bread

As always, where did this weekend go? Too bad we didn’t get to do too much outside due to the dreary weather we’ve been having in Milwaukee.

Did my usual Sunday morning thing–meditated, ate breakfast and watched CBS Sunday Morning.

Breakfast was an egg on a TJ’s sandwich thin with jack cheese, jalapenos, and Frank’s Red Hot sauce. Yum! I love eggs with jalapenos. :)

I really want to get back to doing Body Pump on Sunday mornings, but with my nose now being so stuffy, I figured it wasn’t the best thing for me today.

Instead, I showered and decided to run my errands. I went to Target and Pick N’ Save. I needed some produce, so I picked up a bunch of it at Pick N’ Save. I also got lunch meat, skim milk, Sun Chips, blue corn chips, and yogurt at Target. Oh and gummy bears and Milka chocolate somehow made it into my cart!

I wasn’t feeling the whole shopping thing today even though the stores seemed empty to me.

I ate this when I got home. Just can’t seem to get sick of the Vegetable Masala burgers this week. :)

Then it was time to bake! I had three dark bananas and had been waiting to make banana bread with them.

Please excuse the big hole I created by testing the middle with a knife!

Even though I knew I was going to make banana bread, I didn’t have a recipe picked out yet. Luckily, myrecipes.com tweeted a bunch of banana bread recipes this morning and I bookmarked the tweet. I used the Classic Banana Bread recipe from Cooking Light.

The only alterations I made to the recipe below were that I used whole wheat flour and not all-purpose, I added three heaping scoops of ground flax seeds, and I used Chobani plain greek yogurt instead of regular plain yogurt.

Ingredients

* 2 cups all-purpose flour
* 3/4 teaspoon baking soda
* 1/2 teaspoon salt
* 1 cup sugar
* 1/4 cup butter, softened
* 2 large eggs
* 1 1/2 cups mashed ripe banana (about 3 bananas)
* 1/3 cup plain low-fat yogurt
* 1 teaspoon vanilla extract
* Cooking spray

Preparation

* Preheat oven to 350°.
* Lightly spoon flour into dry measuring cups; level with a knife. Combine the flour, baking soda, and salt, stirring with a whisk.
* Place sugar and butter in a large bowl, and beat with a mixer at medium speed until well blended (about 1 minute). Add the eggs, 1 at a time, beating well after each addition. Add banana, yogurt, and vanilla; beat until blended. Add flour mixture; beat at low speed just until moist. Spoon batter into an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray. Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on wire rack.

It turned out really moist and delicious! I definitely recommend this recipe.

After watching a movie in the afternoon, I finally got my butt to the gym. I wasn’t feeling it because of my stuffy nose, but I went anyway. Glad I did because once I am there, I am always fine. I did 25 minutes on the elliptical, a full circuit of weights, squats on the bosu, and crunches on the Swiss ball.

It was late when I got home and I didn’t have much of an appetite, but I put together a nice salad that contained spinach, chickpeas, feta cheese, tomatoes, cucumbers, & artichokes. I topped it with balsamic vinegar and olive oil.

Dessert was gummy bears and a slice of banana bread.

And now I am watching one of my favorite movies because I am a big bird lover, Winged Migration. I usually turn on the TV while I blog and I still had PBS on, which just so happened to start that movie at the exact time I turned the TV on.

Better read some blogs, catch up on the Sunday newspaper and then get to bed early. Another week awaits!

Busy, but productive Saturday

As my title says, it was a very busy day by choice, but felt so nice and productive. At about 6:20, when we were sitting down and having dinner together, I said to Craig, “wow, this day went by so slowly, but in a good way because I got so much done.” Love those kind of days!

I woke up, meditated and then had a craving for oatmeal, so that’s what I made.

I wanted to go to yoga, but by the time I ate, it was getting late and I was SO full from the oatmeal. I decided to stay home instead and clean. I was in one of my cleaning moods, so I threw laundry in, dusted, washed dishes, cleaned counters and the kitchen table, vacuumed, swept and got the kitchen ready for mopping. I managed to read my book in between cleaning too.

I wasn’t too hungry for a “real” lunch, so I had a pomegranate chobani and a triple chocolate chunk vita top.

The vita top was delicious, as expected! Very chocolaty!

Then I was off to Craig’s grandma’s 90th birthday party. I went late, after the meal was over, because I really didn’t want to pay $15 to have the meal choice they offered and there was no vegetarian option. They had fried chicken, ham, mashed potatoes, green beans, etc. I wouldn’t have enjoyed the meat and it probably would have upset my stomach. I just had a few bites of birthday cake.

After the party, I headed to Pick N’ Save to get some groceries on double double coupon day. I could double 10 coupons, which was great because we needed oatmeal, cereal, clementines, olive oil, etc. and I was able to save a lot of money today.

Then it was time to mop the floors! I really hate this chore more than any other in the house. It takes so much time to clear everything out and we just have a small kitchen and bathroom!

Seeing shiny, clean floors made me happy though.

I felt like the energizer bunny today. The next thing I did was lace up my running shoes and get outside for a 15 minute run.

It felt so good to run outside opposed to the treadmill. I just wish I had a garmin to see what my pace was and the distance I completed. I know they aren’t that much money, but I am not sure it is worth the investment for me. Especially because I couldn’t use it at the gym in the winter.

Clearly this is a (shiny) face of a very happy blogger who can get outside and run, at last!

Because I didn’t go to the gym, I decided to lift my 8 lb. weights too.

Dinner was delicious. Every time I make a quinoa dish like this, I just go “mmmmm” throughout dinner. I made mine with kalamata olives, roasted red peppers, tomatoes, tomato basil feta cheese, dried basil and mural of flavor from Penzey’s spices, olive oil and balsamic vinegar.

When I saw this flavor at the store today, I knew I had to try it in the quinoa dish.

And after dinner, Craig and I went on a long walk around the neighborhood. It was nice to see flowers coming up and some even had bloomed already! They’re really going to go into action tomorrow when it’s in the 70′s.

Right before I started blogging this post, I ate a skinny cow cookies n’ cream ice cream sandwich.

Shopping on my day off

I was off today due to working on Saturday and dedicated my free day to shopping.

On a side note, two years ago today, my wonderful husband asked me to be his wife. :) Best thing I have ever said an ecstatic YES to!

Breakfast was two Eggo waffles (whole wheat) and coffee.

I watched the Today show and wanted to get up to get moving, but this cute kitty laid on the blue blanket on my lap and stayed there for a good 40 minutes. I can’t resist Karma’s charms, so I let him sit there and relish in the warmth of my lap.

I got ready and organized myself for my two shopping trips–one to the mall and the other to the grocery store.

I had some coupons to use up at Banana Republic and Gap and found things at both. Two cute new tops, yay! I also went to Boston Store for their Goodwill sale and handed in some jeans and a top. In turn, I got four 20% off coupons. Since the bras I buy (Wacoal) are never on sale and Macy’s doesn’t let you use their coupons on Wacoal, I bought two bras and a cool new Jockey tank top that included free underwear. The Jockey tank top has some kind of NASA designed cooling technology to keep moisture away from your body. It isn’t necessarily wicking material like is used in fitness clothes. I asked the Jockey rep that when she was telling me more about the material. I get really hot from silk tops underneath shirts and I just get hot all day at work in general, so I hope this works! I’ll let you know how it is.

After two hours at the mall, I was thirsty for something cold and nutritious and a little bite to eat. Off to Starbucks because I had a gift card to use..

I ordered a Strawberry Vivanno smoothie with a boost of green tea matcha and had an orange cranberry scone. Both hit the spot and were delicious!

I didn’t eat lunch, as that snack filled me up.

Then I was off to Menomonee Falls to their Woodman’s. We needed groceries badly again and all of the selection and awesome prices at Woodman’s caused me to spend a little over $100 there.

Clearly these pictures indicate I have a serious Chobani addiction. I also added a few of the Stonyfield greek flavored yogurts to my cart to mix things up.

Overall, I just love the selection of different varieties of food at Woodman’s and their unbeatable prices. I may be going grocery shopping there more often, even though it’s not very close to our house and it’s so huge to navigate through. I found so many fake meat products there especially–score! That is why I bought three tubs of tofu (one herbed, yum) and a Gardein product again because I really liked the tuscan chicken breasts when I reviewed them a couple of months ago.

A late lunch/dinner was a french baguette with ham, provolone, tomatoes, spinach and Frank’s Red Hot.

I meditated, changed and went to the gym for the 4:30 Boot Camp class at the Y. I ran into my friend Angie in the parking lot and I was hoping she’d say the new teacher had started, but alas, it was still the same old one that I don’t care for. I honestly feel like I get a better workout on my own instead of in this particular teacher’s class. I am looking forward to when the new teacher starts in April. Until then, I won’t be attending boot camp and will do my own workout on Mondays instead.

Before my grocery shopping trip, I tried to find some recipes to make for Craig and I to meal plan with. I only found a granola bar recipe that sounded delicious in the recent issue of Fitness magazine. They are called “Oh-So-Good Granola Bars.” Check out the link to make them yourself.

After the gym, we went to the library and then I got to work on making the granola bars.

While they baked, I snacked on plain non-fat Chobani with strawberry rhubarb jam and fresh strawberries.

I tried the bars fresh out of the oven and they are yummy! They didn’t stick together as well as I had hoped they would, but maybe I should have added more honey. I’ll try that next time. It was my first time making granola bars, so I figure I can experiment a little more with ingredients and bake times. I’ll take a picture of a bar tomorrow when I have it for a snack at work mid-morning.

Well, Craig and I are trying to adhere to an earlier bedtime from now on, so I better go get ready for some zzzz’s. It’s back to work for this girl tomorrow.

My husband is a saint

I was certainly tired this morning, as predicted. Woke up, fed the kitties, and went back to bed for a while. My legs hurt, but I tried something new last night with switching shoe types halfway through the night and I think that helped. In the end, the event I coordinated went very well and these events always have the potential to be stressful if one little thing goes wrong, so I was relieved.

For two hours or so this morning, my husband worked on a house project. Seriously, I know someone might be reading this thinking, that’s no big deal. The guy stood on the couch and figured out how to hang these pictures perfectly, despite d-rings not hung the same on the big picture, etc. We could have ended up with completely crooked pictures that would have bugged me for years, but thanks to his precision, we didn’t. I can’t do these kind of projects, so therefore, he is a saint to me.

Believe it or not, we ran around to all of these hardware stores last weekend, only to find that the pictures already had d-rings and the little zig zag picture hangers on the back (they were covered up with cardboard and we were scared to rip it away for fear that we would destroy something on the back of the picture). Craig finally pulled one back this morning and discovered the picture hangers already there. ARGH! We laughed about it in the end, but the instructions on the picture just weren’t that clear.

Breakfast was a big cup of coffee in my Jonathan Adler Starbucks cup and some Jessica’s granola. Are you sick of seeing it yet? I am not sick of eating it!

Lunch was iced coffee and about half of this bowl of the quinoa dish. My husband had the other half. He was starving from working so hard all morning. I also had the rest of the Blueberry Stonyfield yogurt with the last of the pom arils. I finished up lots of items from our fridge today.

After lunch, I snacked on some tangerine and strawberry licorice from Newman’s Own Organics.

They are very yummy! I haven’t tried the pomegranate and black yet, but will report back when I do. What I like about their products overall is that even candy like licorice doesn’t taste too sweet. I like sweet things, don’t get me wrong, but my palette has changed since eating better.

I just lounged around in the afternoon, did laundry, etc. The usual Saturday, except that I tried to rest my legs as much as possible. I read part of the Sedaris book and wasn’t into it, so I quit it. I’ll put more time into finishing Larsson instead.

Around 3, I finally got out of the house and did some grocery shopping. I meal planned first. I picked out a Vegetable Medley with chiles recipe from Clean Start by Terry Walters.

It has parsnips in it, which I have never cooked with, so that’s exciting. I might make it for dinner tomorrow.

I also took a look at our pantry to see what to use up and pair with things I would buy at the store. We had two falafel boxes, so I decided to get the ingredients for falfafel sandwiches and make them for dinner tonight.

My pita contained about three falafel patties, grape tomatoes, Athenos hummus, a chive and yogurt dill dip that I made from the recipe on the falafel box, & lettuce. Craig didn’t want the hummus and the dip, but that’s the best part in my opinion!

My dessert was one of these. Holy yum! Hadn’t tried this flavor before and it’s delicious. I love these little ice cream sandwiches. Perfect dessert portion to keep me from eating more!

I was kind of bummed that I didn’t make it to the gym today. I’ll do a longer workout tomorrow. Maybe I will go when the Packers and Bears are playing because I might be the only person there! :)
