Celiac test

This morning, I tried the new brand of instant oatmeal I purchased at the store on Monday: Better Oats. This was the best instant oatmeal I have had in ages. The cinnamon plum spiced flavor was different and so delicious. The ingredients and nutrition facts are great as well.

Lunch was another smashed white bean sandwich, some carrots and a chocolate chip cookie for dessert. The highlight of my lunch break was trying this little So Delicious coconut chocolate milk. Craig had it for lunch too and enjoyed it.

Besides being dairy and soy free, it’s also gluten free. When I saw that on the back of the carton, I couldn’t help but think of the lab test I was having drawn after work today. I had to get the Celiac panel done. Let’s just hope I don’t have to go gluten free. I’ll let you know when I get the results, of course.

After eating lunch, I ventured outside into the windy, yet warm January temps for a nice walk. I returned this video to the library before I started walking around downtown Milwaukee.

We watched this Jamie Oliver’s Food Escapes show last night and it was fun! I liked seeing the scenery and food that is typically found in Stockholm, Sweden. I don’t like fish, so I am not sure how I would do traveling there. I am willing to try everything once though. :)

I made myself a homemade pizza for dinner tonight. I was trying to use up some things in the freezer-a whole wheat Boboli crust and some pineapple. So, 1/4 was pineapple and ham, I made some with just cheese and ham for Craig and then veggies on the rest! My favorite flavor of pizza is Hawaiian and I rarely get to have it, so this was the closest I got to it in a while (no Canadian bacon but the ham gave it a nice flavor that was close).

The evening flew by tonight! After I rested on the couch, we got to the gym where I got an intense 5.21 mile bike ride in and some weights lifted.

I’ve had a productive Saturday around here…

Made pancakes this morning. No pumpkin this time because my husband likes them plain. You all know what pancakes look like, so no pic was really needed.

Did some laundry using this sample that I got from Vocalpoint.

I was still hungry and had most of this Clif White Chocolate Macadamia Nut bar before going to the gym. It is one of the bars I won in Kimberly’s giveaway. I loved this flavor!

I think it was the perfect thing to eat pre-gym because I had lots of energy for my mostly cardio workout! I biked for 25 minutes while reading this Family Circle magazine, featuring adorable Halloween themed cake pops.

I also did 15 minutes on the Cybex, some ab work, and a bit of weight lifting. I think the Cybex is one of those machines that does the best job of getting my heart rate up and is easy on my old lady joints.

Post-gym and shower, I blended up some spinach, frozen berries, banana, and 2% milk for some his and hers smoothies.

I ran to the mall to get my wedding ring cleaned and inspected and then to the eyeglass store to check out the frames. I am searching for the perfect pair before my eye appointment in mid-October so I can get them ordered right away. I am anxious for some new glasses that fit better than my current ones.

I considered this pair by the brand Chelsea Morgan, but I am not sure Craig will like them. I need a second opinion and he wasn’t with me today.

Did some grocery shopping after my trip to the mall. While picking out some Chobani yogurt, I had an odd feeling that someone was watching me. I turned to the right and there was a Brewers sausage waving at me! For those of you who don’t follow baseball (like me) and don’t live in Wisconsin, the Brewers mascots are sausages that race during the game. The sausage standing right next to me freaked me out a bit, but also made me laugh. Glad for all of the Brewers fans that they won today!

I was also pretty stoked to find lots of great coffee really cheap. A huge 20 oz. bag of Starbucks Breakfast blend was half off, so with a $1.50 off coupon, I got it for $5.50. I also found some Organic coffee whole beans for $4.44 each.

Rewind to last night…

Went dark again with my nails for fall. It’s an OPI shade I had from last year.

Also went to the gym and got a good workout in (stair stepper, walk/run on indoor track, full circuit of weights), then to the store to get some candy corn and some Libby’s pumpkin. Was relieved to find we aren’t out of the canned pumpkin in our area after I heard on the blogosphere that there has been a shortage this year.

Finally, Craig and I watched the beginning of True Grit, which is pretty good so far. Craig thinks I am like the character Mattie Ross. :) It’s the sassy side of me that he is talking about.

We’re watching the rest of it tonight after we head out on a little dinner date. We really never got to formally celebrate our wedding anniversary, so we finally are by going on a date tonight. We are trying an Italian restaurant not far from our house. The menu looks pretty good! I might try a wine flight. I am ashamed to say that I have never ordered a wine or beer flight before, but am feeling like some wine, so I just might do it. I’ll be back with a review tomorrow.

Hope your Labor day was great! Ours was nothing special, but it was mostly relaxing.

I just can’t believe that on Thursday evening we were sitting outside in 90 degree temps with major humidity and now it’s only in the mid 60′s as a high. Where did summer go?

I also can’t believe that my mini vacation is over, but I am sort of ready to go back to work and to a routine.

Before heading to the gym this morning, I had the Chocolate flavor of the Vega Whole Food Health Optimizer. This was not my favorite flavor and I kind of expected it to be because I love chocolate anything. I definitely like the Vanilla Chai flavor better!

I have to say that this did fill me up though! I’ll admit that I missed eating something though and am not sure I am someone who likes drinking things for breakfast instead of eating cereal or oatmeal.

I had to get the gym early because it was closing at 1 today, so I relaxed and then was off! It was packed, but I hopped on the rowing machine, cranked out a good interval workout on the Cybex Arc trainer and lifted machine and free weights.

After the gym, I was on a mission to write a travel recap that I entered in a contest today. The voting for it starts tomorrow and since my full name is on the entry, I’ll probably keep it private, but if you are on my friend on my regular Facebook page, please vote for me! :)

It felt good to get that done and now I have one more entry to accomplish this week too. Hate that it’s still hanging over my head, but I did start working on it yesterday.

Lunch was just a black bean Morningstar veggie burger and then I got a craving for something sweet. Once I saw these grilled bananas on a blog, I decided I would use up our ripening bananas and make them!

I used some of the Tropical Traditions coconut oil to make them.

I didn’t grill them though, just cooked them on the stove. Craig thought I was making bratwursts.

I read my book for a bit and relaxed some more before I began what my title refers to: I labored over cleaning up some of my old computer contents, deciding what to keep from my external hard drive, then Craig wiped off my old hard drive, and now I have a big file of old photos and documents on my new computer to go through. Not a fun task! If your computer is not organized or properly backed up, this is a lesson for you. Get it organized ASAP. Luckily my husband is very computer savvy and helpful, but it was stressful getting old stuff put onto my new computer and realizing that if I didn’t clean it up, that is just more stuff taking up room on my nice laptop. The good thing is that I can now use time machine and my new computer will automatically backup anything new onto my external hard drive.

Once I was sick of working on that project, it was time for some well earned dinner!

I was on a mission to use this KC Masterpiece Barbecue Sauce that the Foodbuzz Tastemaker program sent me to use over the holiday weekend.

I baked the tofu in the stove.

I also baked kale chips with olive oil, nutritional yeast, and I coated a few with some Northwoods Penzey’s spices. These turned out perfect! Much better than the last time I made kale chips.

Loved this meal and can’t wait to have some of it for lunch tomorrow at work. I really enjoyed the flavor of this barbecue sauce and I appreciate the Foodbuzz Tastemaker program sending it to me.

Back to the grind tomorrow. Just happy it’s a four day week!

Quinoa Stuffed Zucchini Boats and DailyFeats

Lately, I’ve been coming up with a meal I want to make and get to cooking it right after I meditate. Tonight, I wanted to use up my zucchinis and I had the two types of onions the recipe called for in my fridge. I remembered that Emily at Daily Garnish made Quinoa Stuffed Zucchini Boats during her internship last summer and I wanted to make them a year ago, but never got around to it!

I finally made them for dinner and I also boiled some corn on the cob.

They came out pretty good! I think they needed a bit more spice. I did add a lot more cumin than Emily called for in her recipe.

After letting my stomach rest a bit, I went to the gym to bike while reading Fitness magazine, do the elliptical for another 15, and I also lifted some weights.

Once home, I recovered with some protein in the form of plain Chobani with raw honey, chia seeds, and sliced almonds.

Night!

Loving the farmers market veggies

My breakfasts and lunches have been kind of boring lately, so I haven’t been taking pictures of them. Lunches are basically leftovers of the meals below.

Last night, we made the corn on the cob that I got at the Farmers Market in Madison. It was delicious! I am glad it’s a vegetable I can make that Craig will also eat.

I topped one of my halves of corn with butter and Penzey’s spices. Then I just felt like eating it plain with butter and salt.

I also made some Mmmm sauce and quinoa again. I’m just a bit addicted to Mmmm sauce!

Tonight, I was craving veggies again and wanted to use some zucchini, but didn’t feel like doing anything elaborate with it. I just cut some up, threw it in the pan and cooked it up some red pepper, garlic, and olive oil and put it on top of a little bit of pasta and Parmesan cheese.

Breakfast this morning was red grapes, half of a banana chocolate chip muffin, and coffee with stevia. It was my first time trying stevia (I won some from a giveaway hosted by Allie at PickyEatingRD) and I thought it was ok. I have been using raw sugar lately and really liking the caramel flavor that produces in my coffee. But, it doesn’t seem to “melt” or blend well with my coffee.

I’ll try the stevia products again in some baked goods soon and let you know how i like it.

It was raining out tonight, so no walk outside for us. :( I just went to the gym and lifted weights, biked while reading Women’s Health magazine, and ran/walked on the treadmill. Running felt good because I really got my heart rate up!

Bloggers are taking over the bookstore!

I’m off to my in-laws’ house today for a family party, so I thought I would recap Saturday before the busy day begins. I still have to get in my workout, shower, and then we need to be at my in-laws’ house by about 12.

For lunch yesterday, I had a 6 inch Subway ham and cheese sandwich and a Godiva Iced Vanilla Bean coffee. I received the Godiva coffee from the Foodbuzz Tastemaker program and I’ll do another separate post on the coffee soon.

We headed out of the house to get Craig’s free birthday drink at Starbucks. Since he doesn’t like coffee, we got a Venti Strawberries N’ Creme.

While at Bed Bath and Beyond, I was beginning to think that we’d never find a toaster that had good reviews or wasn’t cheaply made.

This one seemed cheap.

I liked the look and durability of this one, but Craig scanned in the barcode on his phone and found it didn’t have great reviews on Amazon.

Anything is better than the toaster we currently have which turns itself on! I hate having to remember to unplug it every time we use it. If only we had enough counter space for the toaster oven we own.

Enough ranting about toasters. We didn’t buy one and may just have to go with the Kitchen Aid one that is rated best on Amazon.

After a short nap on the couch, I got to the gym for a pretty good workout. I biked while reading Self magazine, pushed myself on the Cybex Arc Trainer, lifted weights, did abs with the ball, and tortured myself with various planks.

The rest of the night, I just relaxed, made a very late and random dinner, then did dishes and put laundry away since I knew I wouldn’t have much time for it today.

Dinner was a poached egg, provolone cheese, mushrooms, jalapenos, Frank’s Red Hot sauce, tomatoes, and I put Nutritional Yeast on top of the egg and tomatoes. I really couldn’t taste the yeast.

Dessert was nice and healthy–strawberries from our garden & blueberries, topped with some raw sugar.

I’ll be back tonight with a post about weird things and strangely named things families eat. One of the things we are having at the party today is not weird, but has a strange name that I had never heard of until I met my husband. Hearing the name cracks me up every time! Does your family eat anything particularly odd at parties or call certain recipes weird names?

Can’t get enough tempeh!

I actually had a pretty good Monday! I wasn’t too tired either. :)

Susan of The Great Balancing Act had an even better Monday.

I am sure most of you have heard about the awesome fundraiser Janetha at meals & moves put together for Susan. I did bid on a few things, but didn’t win anything and couldn’t keep up with the bids while at work. I was just following the twitter stream on the Great Fundraising Act and saw that they are nearly up to $25,000 raised! That is so wonderful! I am so happy to be a part of this supportive and giving community. Now Susan can hopefully cover the cost of her meds down the road so she can bravely battle cancer.

I just started reading Susan’s blog about a month ago and I have teared up a couple of times reading her posts. She writes so beautifully and honestly.

The rest of this post seems boring compared to the excitement that the Great Fundraising Act created among the blog community today.

I didn’t take a picture of my lunch, but I had a big spinach salad with warmed up tofu, grape tomatoes, green peppers and feta. Yeah, basically what I had yesterday without the mushrooms. I was so full, that all I could eat after that was two Back to Nature peanut butter creme cookies.

My after work snack was Chobani non-fat greek yogurt, berries, and homemade double coconut granola. This tasted divine together. I know what I am having for breakfast tomorrow! :)

And dinner will look familiar because it’s what I had last night (except for the cooked green beans).

That’s right, the tempeh spinach tomato sandwich will probably be one that keeps appearing on my blog because it’s so good that I can’t get enough of it.

I cooked up some green beans from our garden and made them the way my cooking teacher did in class last week. I boiled the water, threw them in for about three minutes, put some olive oil and sea salt on top and they were perfect! Craig tried one and didn’t even mind that they weren’t as cooked as he likes his.

I took my usual pictures of the cats being funny tonight.

Right before I snapped this picture of Tanzi, he was making an Elvis face that had Craig and I cracking up.

He looked like he said “thannk you verrrry much” with his lip curled up. Too bad I couldn’t snap a pic fast enough to capture it!

Karma was up to his weird antics sitting on the top of the recliner. It drives Craig nuts (and makes him slouch), but we still think it’s cute. I have seen pictures of other cats doing this, but this is a recent thing for Karma.

It’s like Google Reader but better. When I am on a computer, I still enjoy using Google Reader. Reading blogs on my iPod through the Google app just wasn’t cutting it anymore.

And to end this lengthy post–my workout today included a 25 minute walk on the treadmill while watching HGTV. I lifted some weights and used the Freemotion machines tonight in addition to the normal machines I usually use. I could really feel the Freemotion working my arm muscles!

When I got back from the gym, Craig and I went on a walk around the neighborhood.

Food conversations at Target

Boy, what a busy Monday it was for me at work. I was running around non-stop. Just when the fax machine would go off (I get most of the faxes), the phone would ring, or a new e-mail would come in.

Luckily, meditating really has seemed to help me control my stress levels at work and also helps me think more clearly. I am sure it has helped in many other ways too!

I started off my Monday with Stonyfield French Vanilla yogurt, berries, and chia seeds. This filled me up!

I snacked on an iced coffee and a string cheese at work mid-morning.

I had a big salad with spinach, feta, and red peppers, topped with Italian dressing for lunch. I also had some baby carrots and a vanilla activia.

After eating and reading some blogs, I started The Hunger Games. Craig has been reading it on his kindle, but he’s a slower reader than me and I couldn’t wait to read it!

So, I picked it up from the library just in time for our upcoming trip up north, where we will be doing lots of reading. I wanted to get a head start on it so I can get into a bit before we are at the cottage. Hope it’s a good read! I like it so far.

A Target trip was in order after work. I got out my “All Out Of” list and coupons and was ready to conquer my list! I was on a mission to get some essentials, a few food items, and to use up some coupons! Love my coupons! I actually never bought a coupon organizer from etsy in the end. I just use this cute and cheery Clinique cosmetic bag and filled it with labeled envelopes full of coupons. It works perfectly!

While at Target, I heard one interesting food related conversation and participated in one. I overheard a young mom say to her two boys that she wasn’t buying them scooby fruit snacks because those particular fruit snacks had artificial ingredients in them. She told them, “you wouldn’t understand, but I buy things that are natural and I read the labels to make sure certain packaged foods are good choices.” They kind of whined and then she said, “you’ll understand someday.” I smiled at her as she said this and thought to myself, what a good mom!

The food conversation I participated in was at the checkout. My cashier saw that I was buying cheap balsamic vinegar. Even though it is from Italy, I am sure it’s nothing special. I just needed some to make salad dressing with and to drizzle on my quinoa. She recommended Oro di Oliva in Wauwatosa. She was so excited to share the details of how you can taste conventional olive oil and vinegar vs. Oro di Oliva’s and really taste the difference! I’ll have to check it out soon.

When I got home from Target, I found this lovely package on our back door step! I kind of squealed with joy upon seeing it! I am sampling five different flavors of Food Should Taste Good chips. The company was also generous enough to give five bags to a lucky reader. I’ll post that giveaway a week from today on the 18th, so check back then if you love these chips as much as I do!

We’ll definitely be sampling those up north too! Craig is a major chip eater, while I tend to only care for these more healthy ones and pita chips. :) I told him he can’t scarf down all of these bags, I must sample them for the blog!

Dinner tonight was boring frozen pizza. I had a larabar at work before leaving, so I wasn’t too hungry. I needed to eat something quickly before heading to the gym.

At the gym, I biked for a half hour while reading an old issue of Health magazine. They showed a drawing of the Bulgarian Split Squat and I decided to try it out when I was done biking.

I enjoyed doing this exercise and will definitely incorporate it into my gym routine more often.

Noticing a gap in my diet today

Glad Monday is over! It was hard to wake up this morning. I think I hit the snooze button three or four times.

I was in the mood for cereal for breakfast, so I tried Raisin Bran crunch. For some reason, I’ve been having cravings for Raisin Bran and I got a good deal on some with double coupon days on Saturday. I didn’t think the “crunch” was a whole lot different than the regular though.

At work, I had an almond iced coffee and a cinnamon mini bagel just plain and warmed up in the microwave.

Lunch today was thrown together quickly, which is why it lacks veggies. I had a pb & j sandwich, a peach chobani and Stacy’s pita chips. I also had a lovely German chocolate Ritter sport mini bar.

After meditating and “being vocal” about my day (my way of saying complaining), I hit the gym and that made me feel better right away. I did 30 minutes on the elliptical and completed some pretty tough intervals while watching House Hunters International. I then lifted weights and did some abs. A pretty normal workout, but I felt energized at the end.

Dinner was some of the spinach I got at the farmer’s market (which seemed unusually dirty compared to spinach I have bought from farmers before. I know veggies and fruit are sometimes going to be dirty, but this was very dirty), red peppers, and I topped it with a Morningstar black bean veggie burger. This was a great & quick meal. You’ll be seeing more of this on the blog!

It was pretty nice out this evening, so we went for a walk around the neighborhood. And finally, we read outside together. Craig is reading the sample of the “127 Hours” book, Between a Rock and a Hard Place, and is enjoying it so far. I didn’t comment on the movie on any of my weekend posts. It was pretty good. We could not watch the really gross parts! I definitely want to prepare for the worst whenever we go anywhere in nature now or on a long road trip.

So, after writing this post and reviewing the preview, I noticed something. I didn’t eat any fruit today and I am not happy about that. I mean, I have lots of it in my fridge, but I just didn’t incorporate fruit into my meals. I guess you could sort of count the raisins in my cereal and the peaches in my chobani yogurt. This is why I like to blog my meals because I see what I am lacking and also what may be affecting my tummy troubles. I better go eat a bowl of raspberries!

That’s all folks. It’s already 9 p.m. and almost time for me to hit the hay.

Energetic Friday

It’s amazing what a good night of sleep can do for you! I probably got about 10 hours of sleep and my body didn’t hurt when I woke up for the first time all week. I felt achy and stressed all week with lots going on at work.

Anyway, I purposely got that much sleep because I have to stay up until midnight this evening for work.

I started my morning with Chobani strawberry yogurt topped with strawberries and blueberries.

While at Target last week, I picked up the Starbucks caramel flavored coffee. It is really good! I honestly have a love/hate relationship with flavored coffee and this flavor impressed me. It reminds me most of a caramel frappucino (without all of the calories associated with said drink). Caramel frappucinos used to be my go to drink at Starbucks, so anything that is similar to it without the fat and calories is ok by me.

After watching the morning shows for a bit including a story on how a proper night of sleep at 8 hours plus helped a bunch of women lose weight (how timely), I finally got ready for the gym.

I was in a really cheery and energetic mood this morning, so I went with my new yellow Danskin Active top and my sassy sweaty bands headband. I even dared to take the picture below without makeup on. 20 something year old me would have never done that, but now that I am nearly 31, I don’t care what people think of my makeup less face anymore.

At the gym, I was in an even better mood when I found that someone left behind an old issue of Whole Living magazine, which is becoming one of my favs. I read that while biking for 18 minutes, I lifted a full circuit of weights, did some free weights, abs and the elliptical for 16 minutes. I love great workouts like the one I had today.

I’m cooking up some tofu topped with Penzey’s mural of flavor spice (which is my favorite of Penzey’s spices), so I better run and check to make sure my tofu doesn’t burn. I want to bring a healthy dinner to work so I feel good for my event tonight. That should ensure I stay in a good mood as well. :)
