Off tomorrow!

My work already declared that they are closing tomorrow! Do you know what that means? I can sleep in, well except for waking up to feed the cats!

I left work early today and worked from home until 5. Tomorrow, I don’t have to work from home, but I will for a bit of the day. I think I’ll put in 3-4 hours tomorrow and then use the rest of the day to prepare for our upcoming trip! I also just want to use some of that time to read magazines. My magazine stack is huge!

Breakfast today was a mini bagel with strawberry cream cheese and a bowl full of fresh blueberries.

I was super busy at work, but I took a brief break for some hot chocolate and a jalapeno cornbread muffin.

Lunch was a buffalo tofu wrap with tons of spinach. I overestimated the amount of spinach I would need, but that’s ok, just more nutrients for my body! I also had a Granny Smith applesauce and a Raspberry Dark Chocolate attune bar for dessert.

Once home, I worked for a while, made some hot chocolate and had two Hermits from Newman’s Own Organics.

Is it weird that I was really looking forward to watching Oprah today because it featured Michael Pollan and talked about her staffers going vegan for a week and how they felt as a result? Unfortunately, due to the blizzard news coverage, it got pushed to airing at 12:30 a.m. We don’t have DVR, so I won’t be watching that show except for maybe in a rerun. It really stinks that Oprah doesn’t have videos of her show available online. I guess I can always read the transcripts. Did anyone see it? If you did or plan to watch it on your DVR, can you please fill me in?

This is what our front yard and my poor little Honda Fit looked like this afternoon. This is nothing because we’ll be adding 12-16 inches on top of this already high amount of snow!

On his way home from work, Craig called and asked if I could start making some frozen pierogies.

This was our first time buying frozen pierogies. I was the one that pushed buying them. Craig is ancestrally half Polish and I don’t think he ever had a pierogie until tonight. I had had them before, but it’s been a while.

They were yummy, but three pierogies didn’t make a dinner. We are trying to use up food before our trip, so I didn’t have a lot of fresh food to pair with my pierogies.

Instead I made his and hers berry smoothies with Soy protein powder. I added frozen mixed berries, blueberries, almond milk and pineapple.

My husband and I knew each other in high school. We had algebra together and he sat behind me. We never dated. Nine years later, I moved back from California and in with my parents, who were now living in a town other than the one I grew up in. While perusing our high school alma mater grads on MySpace, my husband happened to see the name of the town I lived in and he recognized my picture from high school. He had been working in the town my parents now live in for 8 years at that point. Craig had been down the road the whole time and I never knew it. After e-mailing each other daily, we met for ice cream a couple of weeks later and the rest is history. He even proposed at the ice cream place we met at. :)

Ok, I am feeling like my writing isn’t so great and I am getting tired. Time to read a few blogs and then disconnect.

My husband is a saint

I was certainly tired this morning, as predicted. Woke up, fed the kitties, and went back to bed for a while. My legs hurt, but I tried something new last night with switching shoe types halfway through the night and I think that helped. In the end, the event I coordinated went very well and these events always have the potential to be stressful if one little thing goes wrong, so I was relieved.

For two hours or so this morning, my husband worked on a house project. Seriously, I know someone might be reading this thinking, that’s no big deal. The guy stood on the couch and figured out how to hang these pictures perfectly, despite d-rings not hung the same on the big picture, etc. We could have ended up with completely crooked pictures that would have bugged me for years, but thanks to his precision, we didn’t. I can’t do these kind of projects, so therefore, he is a saint to me.

Believe it or not, we ran around to all of these hardware stores last weekend, only to find that the pictures already had d-rings and the little zig zag picture hangers on the back (they were covered up with cardboard and we were scared to rip it away for fear that we would destroy something on the back of the picture). Craig finally pulled one back this morning and discovered the picture hangers already there. ARGH! We laughed about it in the end, but the instructions on the picture just weren’t that clear.

Breakfast was a big cup of coffee in my Jonathan Adler Starbucks cup and some Jessica’s granola. Are you sick of seeing it yet? I am not sick of eating it!

Lunch was iced coffee and about half of this bowl of the quinoa dish. My husband had the other half. He was starving from working so hard all morning. I also had the rest of the Blueberry Stonyfield yogurt with the last of the pom arils. I finished up lots of items from our fridge today.

After lunch, I snacked on some tangerine and strawberry licorice from Newman’s Own Organics.

They are very yummy! I haven’t tried the pomegranate and black yet, but will report back when I do. What I like about their products overall is that even candy like licorice doesn’t taste too sweet. I like sweet things, don’t get me wrong, but my palette has changed since eating better.

I just lounged around in the afternoon, did laundry, etc. The usual Saturday, except that I tried to rest my legs as much as possible. I read part of the Sedaris book and wasn’t into it, so I quit it. I’ll put more time into finishing Larsson instead.

Around 3, I finally got out of the house and did some grocery shopping. I meal planned first. I picked out a Vegetable Medley with chiles recipe from Clean Start by Terry Walters.

It has parsnips in it, which I have never cooked with, so that’s exciting. I might make it for dinner tomorrow.

I also took a look at our pantry to see what to use up and pair with things I would buy at the store. We had two falafel boxes, so I decided to get the ingredients for falfafel sandwiches and make them for dinner tonight.

My pita contained about three falafel patties, grape tomatoes, Athenos hummus, a chive and yogurt dill dip that I made from the recipe on the falafel box, & lettuce. Craig didn’t want the hummus and the dip, but that’s the best part in my opinion!

My dessert was one of these. Holy yum! Hadn’t tried this flavor before and it’s delicious. I love these little ice cream sandwiches. Perfect dessert portion to keep me from eating more!

I was kind of bummed that I didn’t make it to the gym today. I’ll do a longer workout tomorrow. Maybe I will go when the Packers and Bears are playing because I might be the only person there! :)

Hi ho, hi ho, it’s off to work I go…

I am going into work soon, so this will be a somewhat quick and short post.

It is freezing out this morning and I decided to skip the gym. I cleaned the house instead and did laundry.

Breakfast was stovetop oats with pumpkin, vanilla extract, a bit of brown sugar, pumpkin pie spice, two different types of cinnamon spices from Penzey’s, a banana and a bit of frozen berries. I topped it with pom arils. I made too much, so I saved some for tomorrow morning.

I also organized my coupons this morning and sorted them into their respective envelopes. I just use an old cosmetic bag and envelopes labeled with the coupon type. Karma was enjoying the sunshine (while sitting in the Amazon.com box) and it was quite shadowy in our living room.

I just had another cup of coffee because I need to stay up until midnight. I am an old lady and can’t really stay up past 10:30 without feeling so tired. These late events are hard on me because my sleep schedule is out of whack and because when I get home from work, I find I am still kind of wired and thinking about the event and what could be done differently, etc. Oh well, hi ho, hi ho, it’s off to work I go…

I was just about to post this and the UPS man came and delivered a package. Holy best mail week ever (I love getting mail, but doesn’t everyone?)!! It was from the nice folks at Newman’s Own Organics. Four different types of licorice to try–black licorice, tangerine, strawberry and pomegranate. Cool fruity flavors, huh? Can’t wait to dig into some of those this weekend and I’ll share my thoughts on them, of course. :)

Full moon craziness

Does anyone else believe that the full moon brings out the crazies? I didn’t know why today was so horrible and nuts until at the end of the day, a few people in another department had told me that they experienced the same craziness and it was a full moon tonight, so that explained everything. Let’s just leave it at this: I didn’t have a good day. I know that I need to change the way I react to issues and be more positive. I also know other things that I cannot say on here, but wish I could.

My day started off right…I made a glorious and filling bowl of stovetop oats for breakfast this morning.

I added Libby’s pumpkin (about a 1/2 cup), all spice, cinnamon, a whole banana, frozen berries, vanilla extract, honey and a few raisins for some chewiness. It was very tasty and satisfying! Much better than my cereal and milk breakfasts. It did take more time to make, so it’s for those mornings when I have the time.

Snack at work was another cup of coffee with some Newman’s Own Organics mini pretzels.

Lunch was gardein’s santa fe good stuff, a cinnamon applesauce and a lot of carrots. An unpictured dessert consisted of two strawberry laffy taffies.

Dinner was frozen pizza. I was so tired that cooking was the last thing on my mind. I needed to bake comforting cookies, not cook.

Yoga was at home with Craig instead of at the Y. I left work late and then Craig said we could do yoga at home, so that settled that. I really missed my Y yoga class, but will do it this Thursday evening.

I guess on my really bad days, I just freeze and don’t want to do anything. Anyone else do this? Or any good tips to get out of a funk when you are in one?

Balanced

Last night, I did end up doing Wii Fit before heading to bed. I hadn’t done it in ages and two good things came from not doing it for a while–the program told me I lost weight and that I was amazingly balanced! I think my time at the gym has definitely paid off. I am more excited about the being balanced news than anything else. Last year, I dealt with spraining my right ankle and finding out my left ankle had a small break in it. I felt off balance all year, even with physical therapy. From going to the YMCA regularly and strength training more, I have gained strength in my legs and core and it has helped tremendously.

Doing some yoga, balance exercises and a little boxing on the Wii seemed to have help my stomach, because I felt better this morning.

My first meal of the day was Kashi Autumn Wheat and coffee.

Snack was a small piece of Danish and coffee.

Lunch was spinach salad with baby carrots, tofu, red sweet pepper, a tiny bit of Greek style feta dressing and Irish cheddar to add a nice kick to the meal. I also had an applesauce and Stonyfield Oikos honey yogurt. Dessert was Newman’s Own chocolate chip cookies.

The cookies are so addictive! I had to put them down and tell myself to stop at one point!

I didn’t know what to make for dinner, so I settled on having a fried egg sandwich with provolone cheese on an english muffin. It hit the spot!

After work, I opened up a pomegranate and got the arils out, so I topped a Strawberry Pomegranate Stonyfield yogurt with arils.

I went to my Thursday night yoga class and we had a substitute teacher. We started class with Tai Chi, transitioned to more flow yoga and then did some traditional poses and abs. I was proud of myself–my core is the weakest part of my body and I stuck with staying strong on all of the tough ab exercises and felt the burn. It was a good class, but I really missed our regular teacher.

After class, I snacked on an Arnold’s Thin with NuttZo Peanut Free and some all natural pb chips.

Glad tomorrow is Friday, even if my weekend is cut short because I have to work a half day on Sunday! Hope you had a good Thursday.

Back to work

I had a very good Monday back at work. Didn’t come back to too much and got a lot done.

Breakfast today was stove top oats mixed with flax seeds. I topped it with Justin’s Chocolate Hazelnut butter. I decided to try a packet of this vs. buying Nutella. I really liked Justin’s flavor (less sweet than Nutella, which is a good thing in my book) and the texture was nice (more gritty than Nutella).

I made myself another cup of coffee at work and snacked on some barbecue flavored Soy Crisps from Newman’s Own Organics.

I ate lunch really late because of a meeting. My breakfast and snack allowed me to hold off a little on my lunch time.

Lunch was tofu and veggies leftovers, two clementines, a Stonyfield Cherry Vanilla yogurt and two chocolate chip cookies. Through blogging, I realize I have a big appetite for lunch and vary my lunches a little more than my dinners with the different food groups. I eat more calories during lunch than any other meal. Does anyone else eat this much for lunch on a regular basis?

After work, I went to Bodyblast Boot Camp at the YMCA and we had a new teacher. He had some good stations set up. My favorite was the punching bag and the kettle bells. Unlike other boot camps, we got to choose the stations we wanted to go to and there were about 8-10 set up. I liked having the choice.

Dinner was a whole wheat tortilla with pinto beans, spinach leaves, tomatoes, salsa, Frank’s Red Hot, and a bit of colby jack cheese.

I had a banana with the rest of Justin’s for dessert (and an unpictured cookie).

I need to try to make some of this with the food processor! The ingredients are pretty simple.

I was out late last night, so I am catching up on Wednesday’s post.

I felt a lot better on Wednesday. I am so happy that illness passed. I had so much more energy at work, luckily, since we were cleaning again and I pretty much got my workout in by walking a lot and lifting boxes.

Lunch was the rest of my Subway sandwich, a berry applesauce, Stonyfield honey oikos yogurt (really not loving this flavor now) and two clementines. I am still eating more calories to make up for Monday.

After work, I had dinner at the Wicked Hop restaurant in Milwaukee’s Third Ward with my friends. We finally celebrated Christmas together by eating out.

Our friend Jenny arrived last and had wonderful news! She got engaged on Christmas eve! She has been dating her now fiance Tim for about 10 years plus. We were all so happy for her that we squealed with excitement, were ooing and aawing over her ring and loved hearing about how the proposal happened.

My dinner was a Tequila Chicken Wrap with fruit on the side. I also enjoyed a Strongbow. I am definitely a cider or wine girl vs. beer.

We had to celebrate Jenny’s engagement with some dessert! It was delicious Red Velvet Cake that the Wicked Hop gets from the C. Adams bakery at the Milwaukee Public Market.

Wine and dark chocolate=the best medicine

I am finally feeling a little better. The afternoon of rest and relaxation is certainly what I needed.

Craig and I had a nice dinner together and I had spent my evening reading the newspaper (I’m always behind on reading the Sunday newspaper, except for the ads, of course).

I picked up this Dubliner cheese at Aldi and it is really good. I have had it before, but not for a couple of years. The price was probably half of what it costs at other stores.

I had snacked on a few slices of the Dubliner cheese and then decided to include it in my random dinner creation.

I added slices of cheese to toasted Arnold’s Thins and topped one of the slices with Trader Joe’s Bruschetta.

I also had some broccoli and baby carrots on the side to get more veggies in my diet. I enjoyed another small glass of the Bolthouse Farm Berry Boost smoothie (also available at Aldi’s currently).

Later in the evening, I felt like having some wine. I paired it with some Newman’s Own Organics Dark Chocolate. I only had about three small squares because the flavor hit the spot perfectly and I didn’t have any more cravings for something sweet. Maybe this combination could be the medicine that cures me of feeling sick anymore this week. ;)

2011 is fast approaching and so many other bloggers are putting their goals or resolutions out there. I would like to come up with some to hold myself accountable. I already have a few in mind and probably will blog them on Friday. If you have any big goals for 2011, please share them to inspire me and other readers!

I like what Paige at Running Around Normal did with her 2011 goals. I especially liked how she reflected on her 2010 goals and whether or not she achieved them–this is the best way to be accountable for your actions if you are going to put your goals out there in the blogosphere. Like Paige did, breaking some of the goals into certain parts of the year always seems to work for me. Then there are other goals or resolutions that you just try to achieve throughout the year. I am excited to write down some goals and work towards an even healthier 2011.

Well, it’s getting late and this girl definitely needs sleep so I can make it into work and have energy for tomorrow.

My first oats in a jar

Anyone else ready for a mini Christmas vacation? I am ready for our vacation in Florida, but I have to wait another month and a half for that. Gee, we better get our flights, rental car and hotel booked soon! Anyone have any recommendations of where to eat and stay in the Orlando area?

My breakfast consisted of the blog world’s famous “oats in a jar.” I don’t know who started it, but they are a genius. I took a container of NuttZo that only had about an inch left of nut butter left and put stovetop oats into it. I also added some honey and greek yogurt to sweeten and add protein. No dishes to wash, just a container to recycle. This would be perfect to take to work, as long as you don’t mind a cooler bowl of oats. Obviously, I would highly recommend trying the oats in a jar idea.

Lunch was leftover Qdoba (veggies burrito), the last Oikos caramel yogurt, clementines and some chocolate–a Kinder Bueno to be specific. I am surrounded by chocolate at the office. Not just any chocolate, but German chocolate! My former co-worker (who is German and now lives there again) sent our office a nice package of treats to munch on before the holidays–thank god for her. Alas, I resisted the chocolate until lunch today. I also couldn’t resist the temptation of Haribo Frogs. For some reason, they seem to be softer from Germany.

I particpated in my third Zumba class tonight. It was challenging in the middle of the class. There were new dance moves and songs and I couldn’t catch onto the moves. I laughed with another girl in front of me and admitted out loud that I was lost. After class, I lifted weights for my legs. I haven’t been in the workout room in a while to go on machines or the weights. It’s been all classes lately and I miss the workout room.

Dinner was an Arnold Thin with sweet peppers, brie, chipolte mayo and oregano. It tasted yummy! I also had some carrots on the side and a Fig Newman. Like many of the Newman’s Own Organics products, these tasted like Fig Newtons, only less sweet.

I have more energy tonight and will not fall asleep on the couch!

Time to use that energy to wash dishes and pick up around the house. Night!

 

Secret Santa and last Boot Camp

I didn’t take any photos of my meals today–breakfast was apple cinnamon cheerios and coffee. Lunch was a peach Chobani, a NuttZo and strawberry jelly sandwich, and two Newman’s Own Organics chocolate creme cookies.

Dinner was with my co-workers at a restaurant/bar for our Secret Santa exchange. I had a yummy grilled vegetable sandwich and a side salad (hate that you have to pay more to have a side salad instead of fries, but that’s what I did. Things like that make me think our country is so backwards about healthy eating). I also had a nice glass of Merlot. I promised myself a nice drink after working hard over the weekend. I ate half of my sandwich and saved the rest for lunch or dinner tomorrow.
