A good day

Despite being disappointed about Boot Camp class yesterday, I am sore in my legs today. I credit the squats we did in warmup and the squats I did with a heavy medicine ball on the bosu.

Breakfast was a fried egg on an English muffin and some cantaloupe on the side. The cantaloupe tasted so good. I cut it up before bed last night and couldn’t stop eating it!

Snack at work was a hot chocolate and a few raw almonds.

Lunch was minestrone soup and I threw some pita chips into it, which reminded me of tortilla soup. I love tortilla soup and really should make it at home sometime because Craig likes it too. I also had some grape tomatoes and a pink lady apple. Lots of red foods going on for my lunchtime eats!

I had an afternoon snack of Yogi green tea kombucha and a small square of dark chocolate.

I had quite the sweet tooth today! Upon arriving home, I needed a piece of Newman’s Own Organics tangerine licorice.

Dinner was a whole wheat tortilla with salsa, tomatoes, lettuce, pinto beans, taco flavored shredded cheese and some Penzey’s A Mural of Flavor spice sprinkled on top.

After dinner, I had a bowl of Neopolitan ice cream.

I was craving peanut butter and had some Reese’s pb chips. Told you I had a sweet tooth tonight!

Yoga tonight was great. My favorite teacher was back! He just radiates positivity, which is what I need during my work week! My friend Angie had never had class with him and she also noticed that he is so happy. My body was sore, so the stretching felt wonderful.

Now I am watching a travel show about Amsterdam and the Netherlands in general and remembering our honeymoon in Europe, wishing I was going back there soon.

We visited Amsterdam after being in a couple of German cities. We both got really ill on our second day there, especially my husband. I remember going through the Van Gogh museum feeling ready to faint. I was so happy to have seen the Almond Blossom painting though because it is one of my favorite paintings of all time.

At least we got to the Anne Frank house before feeling totally sick on that second day. I loved seeing where her family lived. Seeing her diary and her room brought me to tears though.

Oh, these darn travel shows! I have the itch to travel to Europe again. Or maybe our next big trip will be a tour in India?

I am getting my haircut tomorrow morning! It’s been three months since my last cut and my hair is getting super long. I’ll post before and after pics tomorrow. I am also getting my hair highlighted on Saturday, so I’ll feel all refreshed again after this weekend.

All in all, it was a good day. After a not so great Monday, I was happy to be productive, yet not stressed all day.

Sleep success

I successfully got to bed at 9:45 last night. I tried to read my book in bed, but the meowing cats and my energetic husband distracted me. I read about 10 pages and then my eyes got really sleepy. I woke up this morning feeling much better–still tired, but more rested than I normally am. I’ll definitely be aiming for that bedtime from now on.

Breakfast today was Stonyfield blueberry yogurt with fresh blueberries and pom arils on top. I had a half of a plain bagel with Philadelphia spinach and artichoke cream cheese.

Mid-morning, I had the opportunity to snack on a free cup of coffee, fruit and a danish. Couldn’t pass that free food up and I was hungry! I also had a few truffles that a co-worker brought in. They just melted in my mouth and were so delicious.

Lunch was a whole wheat tortilla with pinto beans and a slice of pepper jack cheese. I had an applesauce on the side.

I left work early to go to the dermatologist. On the way there, I hit a slushy patch of snow going downhill and could not stop at a yellow light. I actually ended up in the middle of the intersection and a dump truck was about to come through from the other direction. Luckily, I was able to back up and compose myself. Once I was at the doc, I was relieved because I had a mole that needed to be checked and it was fine.

When I got out, it looked like a blizzard outside. The roads were really bad. After what had happened before, I drove really slowly and still had some slushy patches give me trouble, but arrived home just fine.

Now, I am at home and resting before I head back out to babysit my nephews. I hope the snow stops and the roads are ok. I hate driving in the snow, especially because my little car isn’t great in it.

Back to work

I had a very good Monday back at work. Didn’t come back to too much and got a lot done.

Breakfast today was stove top oats mixed with flax seeds. I topped it with Justin’s Chocolate Hazelnut butter. I decided to try a packet of this vs. buying Nutella. I really liked Justin’s flavor (less sweet than Nutella, which is a good thing in my book) and the texture was nice (more gritty than Nutella).

I made myself another cup of coffee at work and snacked on some barbecue flavored Soy Crisps from Newman’s Own Organics.

I ate lunch really late because of a meeting. My breakfast and snack allowed me to hold off a little on my lunch time.

Lunch was tofu and veggies leftovers, two clementines, a Stonyfield Cherry Vanilla yogurt and two chocolate chip cookies. Through blogging, I realize I have a big appetite for lunch and vary my lunches a little more than my dinners with the different food groups. I eat more calories during lunch than any other meal. Does anyone else eat this much for lunch on a regular basis?

After work, I went to Bodyblast Boot Camp at the YMCA and we had a new teacher. He had some good stations set up. My favorite was the punching bag and the kettle bells. Unlike other boot camps, we got to choose the stations we wanted to go to and there were about 8-10 set up. I liked having the choice.

Dinner was a whole wheat tortilla with pinto beans, spinach leaves, tomatoes, salsa, Frank’s Red Hot, and a bit of colby jack cheese.

I had a banana with the rest of Justin’s for dessert (and an unpictured cookie).

I need to try to make some of this with the food processor! The ingredients are pretty simple.
