From tired to energetic

The end of the week laziness set in last night, so I didn’t blog or make it to the gym. I just laid on the couch. I swear that my body shuts down on Friday nights and it’s impossible for me to do anything. Guess the week wore me out more than I thought it did.

I made up for the Friday night case of the lazies by having tons of energy today. I got up around 8, ate this breakfast:

I didn’t love this cherry flavor. I think I got strawberry last time and it was better. This tasted more soy like. I like my dairy yogurt I guess and if I was vegan or had lactose intolerance, I would choose soy yogurt over having no yogurt at all.

I went to the Y and hit the 8:45 yoga class. It was mostly flow, with some pretty difficult poses thrown in. It’s funny how much more difficult it is for me to do yoga in the morning vs. at night. My hips hurt and don’t feel warmed up at all in the morning. Some of the difficult poses really struck my hip area with pain.

After an hour of yoga, I still had tons of energy, so I hit the elliptical for 10 minutes, the rowing machine for a bit and then did a full circuit of weights.

I got home and still had more energy than I knew what to do with. Threw in some laundry, showered and ate lunch, which was a Morningstar black bean veggie burger, Irish cheese, tomato on an Arnold’s Thin. I also had a cup of cinnamon applesauce.

Dessert was Newman’s Own Organics dark chocolate with some all natural peanut butter chips.

Then, I went to about 6 stores in an hour and fifteen minutes. They were all quick trips. I picked up a silicone swim cap so I can hit the pool soon and protect my hair.

I went to Sears to check out the Golla camera bag I want to get before our trip to Florida. I had only seen it online, so I wanted to check it out in person.

I liked it a lot–it’s stylish, roomy, and looks like it will be comfortable to carry. I took pictures of how the bag secures with a strap on the side and a Sears worker came over kind of looking at me suspiciously.

I explained to the worker that I had been researching the bag online this morning and talking to my husband about the different features. I was explaining how the bag secures magnetically in front and with the side strap, but my husband didn’t think that sounded very secure. He was concerned someone could just come along and open it up when I wasn’t looking. The Sears worker didn’t seem to like the bag I chose and showed me a very standard DSLR case. I explained that I liked the one I chose because it didn’t look like a camera bag and he said “no, it looks more like a lunch pail.” I argued back that it looked more like a purse and didn’t scream “DSLR camera bag” or tourist. It cracked me up that he used the word “pail” and gave my husband a good laugh when I got home and told him about it! I guess my opinion is sure to be a little different than that of a 50 something year old man!

Anyone have a camera case that is stylish and cute to recommend? I am about 90% sure I will go with the Golla, but then I feel bad if it looks to feminine for my husband to carry. I take all of the pictures on our trips, but he often carries the camera because I deal with a purse. The nice thing about the Golla is that it has numerous pockets and areas for me to carry purse items in, so I may not even need a big purse.

And as I wrote this post, I was snacking on some Stonyfield blueberry yogurt with pom arils.

Time to hit the grocery store with Craig for a big shopping trip. We need lots of food!

Quick meal recap from Friday, January 7, 2011.

Breakfast was stovetop oats with ground flax seeds, half of a banana and pomegranate arils. It was kind of blah, but filled me up.

I treated myself to my free lunch at work and got a grilled cheese with avocado, bacon and tomatoes. I had a cup of fruit on the side.

Dinner (no picture)–I had a tortilla with pinto beans, some cheese, salsa and Frank’s Red Hot.

Hope your Saturday has been fabulous! After the grocery store, I want to make a nice dinner for Craig and I and bake some more chocolate chip cookies.

Balanced

Last night, I did end up doing Wii Fit before heading to bed. I hadn’t done it in ages and two good things came from not doing it for a while–the program told me I lost weight and that I was amazingly balanced! I think my time at the gym has definitely paid off. I am more excited about the being balanced news than anything else. Last year, I dealt with spraining my right ankle and finding out my left ankle had a small break in it. I felt off balance all year, even with physical therapy. From going to the YMCA regularly and strength training more, I have gained strength in my legs and core and it has helped tremendously.

Doing some yoga, balance exercises and a little boxing on the Wii seemed to have help my stomach, because I felt better this morning.

My first meal of the day was Kashi Autumn Wheat and coffee.

Snack was a small piece of Danish and coffee.

Lunch was spinach salad with baby carrots, tofu, red sweet pepper, a tiny bit of Greek style feta dressing and Irish cheddar to add a nice kick to the meal. I also had an applesauce and Stonyfield Oikos honey yogurt. Dessert was Newman’s Own chocolate chip cookies.

The cookies are so addictive! I had to put them down and tell myself to stop at one point!

I didn’t know what to make for dinner, so I settled on having a fried egg sandwich with provolone cheese on an english muffin. It hit the spot!

After work, I opened up a pomegranate and got the arils out, so I topped a Strawberry Pomegranate Stonyfield yogurt with arils.

I went to my Thursday night yoga class and we had a substitute teacher. We started class with Tai Chi, transitioned to more flow yoga and then did some traditional poses and abs. I was proud of myself–my core is the weakest part of my body and I stuck with staying strong on all of the tough ab exercises and felt the burn. It was a good class, but I really missed our regular teacher.

After class, I snacked on an Arnold’s Thin with NuttZo Peanut Free and some all natural pb chips.

Glad tomorrow is Friday, even if my weekend is cut short because I have to work a half day on Sunday! Hope you had a good Thursday.

Aaah, strong coffee

I love strong (expensive) coffee with a full body and great taste. My boss didn’t like this coffee, it was too “earthy” for him, so he gave it to me to try out. I loved it! I always pay a little more for coffee and find it is worth it. This coffee is local to Milwaukee, so I also like buying local products when I can. I don’t buy Alterra too often, but maybe I will more now that I was so impressed with my yummy cup this morning.

After I post this, I am going to search the internet for some Cyber Monday deals. I am not looking for anything in particular for Christmas presents or myself, except prescription swim goggles and there aren’t any deals with those. I just hoped that there were a few excellent deals that would be too good to pass up. Anyone find anything exciting online?

Back to work this morning. In a way, it feels good to be back to a routine. I loved my days off, but a routine is also good too.

I had Total Cranberry cereal with pomegranate arils for breakfast and a big glass of coffee.

Practicing my Thanksgiving dish

Hooray! Thanksgiving is tomorrow and that means I have a four day weekend! Can’t wait for Pumpkin Pie, Green Bean casserole and Sweet Potato casserole tomorrow. Oh and a few glasses of wine. ;)

Breakfast today was Total Blueberry and Pomegranate cereal with some POM arils on top.

Lunch was the rest of my Subway sandwich, baby carrots, red peppers, Newman’s Own Organic pretzels and Newman’s Own Organic chocolate chocolate chip cookies.

This was my first time trying the pretzels. I asked Newman’s Own Organics if I could review some of their food and they sent me a huge package of various items. I’ll be reviewing them over the next week/weeks. The pretzels were hot as they say on the package, but they weren’t overwhelmingly hot. The heat reminded me of jalapenos or Frank’s Red Hot sauce.

I was tired after work and took a little nap. Then, I got to work in the kitchen. I wanted to try out the recipe I am making for Thanksgiving tomorrow to make sure it was ok. I am making Oh She Glow’s recipe Mandarin and Maple Spiced Quinoa.

The recipe calls for toasted almonds and pecans. Until about a year ago, I wasn’t really much of a cook or baker. Reading food blogs has helped me with my confidence in the kitchen and I guess writing my own blog also has done the same. I confess that I hadn’t toasted nuts in my life until tonight. My co-worker scared me a bit today, saying that it was hard to do. I just tried it anyway and set the oven for 350 degrees, coated the pan with cooking spray and then coated the sliced almonds and pecans too. They were in the oven for about 10 minutes and I flipped them over a couple of times. They turned out perfect! I am going to toast nuts for recipes more often. It’s so easy. I put the heated oven to good use and baked some brownies too.

I measured out the ingredients, followed Oh She Glows’ recipe on my iPod touch and it was really easy to make!

I think (hope) it will be a hit tomorrow. Except for my mom and Craig, all of the guests attending Thanksgiving lunch have never tried Quinoa before.

It’s a great dish for fall. I had commented to Craig that it would be good for breakfast and then I reread Oh She Glows’ post and she said the same thing.

Mandarin & Maple Spiced Quinoa with Cranberries, Apricots and Almonds

Chewy, crunchy, and subtly sweet, this dish captures Autumn all in one delicious spot.

Ingredients:

  • 1 cup quinoa, uncooked
  • 1 & 3/4 cup water
  • 1/2 cup dried apricots, chopped
  • 1/4 cup dried cranberries
  • 1/3 cup toasted almonds
  • 1 tbsp pure maple syrup
  • 1 tbsp mandarin juice
  • 1/2 cup mandarin slices, from can or fresh
  • 1-2 tbsp pecans, chopped & toasted
  • 1/2 tbsp extra virgin olive oil
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4-1/2 tsp sea salt, to taste
  • Cinnamon + maple syrup + sea salt, to garnish before serving

Directions: Add your quinoa, water, cinnamon, nutmeg, sea salt, and mandarin juice. Bring this mixture to a boil and then reduce to low and simmer for about 12-13 minutes. Now stir in your chopped dried apricots and cranberries. Cook on low, covered, for another 5 minutes. Stir in your oil, almonds, and maple syrup. Taste and adjust seasonings if necessary. Stir in the mandarin oranges very gently. Pour into a bowl and garnish with chopped pecans, a drizzle of maple syrup, cinnamon, and sea salt. Makes about 2.5-3 cups.

My first pomegranate

I/we got a lot done today. Love that feeling! I crossed a few things off my to do list. I’ll tell you about some of that in the next post.

I did get to yoga from 8:45-9:45 a.m. and lifted a few weights after. The yoga poses we did today were pretty similar to what my Thursday class had done. The teacher I had this morning is just a little more challenging because the poses flow more quickly.

When I got home, I broke open the POM pomegranate that has been sitting on our counter for weeks.
