A healthy and divine dessert

Since Craig and I were both off of work today, we just kind of approached the day in a leisurely fashion.

I listened in on a Institute for Integrative Nutrition webinar which promoted the program and answered questions from the audience. It was informative and well thought out. I am just not sure I want to spend that kind of money on another degree (even though I need to spend it on some type of program in order to make a career change).

Since it’s that time of the month, I can’t get enough chocolate today. I had a couple of pieces of this for dessert. I gave my mom a bar for her b-day yesterday and she enjoyed it too.

After lunch, we went to Batteries Plus to get my car battery tested (they do it for free there, whether or not you buy a battery). We found the store to be busy with customers and friendly sales people to help them. I did need a new battery within the next year, so I bit the bullet and bought a new one. They installed it there and the installation was totally free and quick. I ended up getting a pretty good deal on with a coupon I printed off the web, so I was happy. My car started up much more nicely once it had a new battery to power it with! I know this has nothing to do with healthy living, but I thought I would just give a nice little review on our positive experience at Batteries Plus. :)

Then it was time to watch the storms come in. We got pounded a bit this afternoon, but nothing like the flooding they’re experiencing north of us.

And my dessert was INSANELY FANTASTIC. I won some Orange, Lemon and Vanilla stevia drops from NuNaturals through Clare’s blog. I got the idea for my dessert from her giveaway post. I just combined some Fage plain greek yogurt, a few lemon stevia drops and strawberries. I haven’t been this crazy happy with a dessert in a long time and it’s super healthy to boot! I kept saying “mmmm” every time I took a bite! I can’t wait to make this again.

Time for a walk outside! It’s the perfect time of night. It’s cooling off and the birds are all chirping so happily. Aaah, I love spring.

Steel cut oats stole my heart

Can you believe that I write about food a lot on this blog and have never tried steel cut oats? These Bob’s Red Mill ones were on sale and I decided to give them a shot finally. I’ve been wanting to try them for a while, but just never made the purchase.

I made them for dinner last night. I had just purchased some strawberries from the store and that combination sounded delicious to me. I added some cinnamon and sugar, a bit of maple syrup and some coconut milk. I couldn’t eat this whole bowl, so I saved some for breakfast today and they were just as good warmed up.

What I like about them is that they kept me full a long time, the taste and texture seems great compared to rolled oats and they are so good for you!

Earlier in the day, I had these oats for breakfast and snapped a photo because breakfast was the photo for the March photo a day. I also love these oats too and will still enjoy eating anything by this brand.

Yesterday, I met up with my friend Kim for a great discussion about my career. Basically, I am trying to find something that matches well with my passion for nutrition, fitness and/or holistic health. I have ruled out a couple of possibilities and was still considering one, which Kim offered some insight on. I am just not sure what path to take and it’s pretty stressful. I don’t want to look back on this blog a year from now and be stuck in my same job. I am looking for a new one and feel very motivated to find one now.

Well it’s getting late and the night flew by with meditation and a workout, so I better get ready for bed. Good night!

A busy Monday

Rewind to yesterday afternoon/last night. I accomplished what I consider the two worst chores (besides mopping the kitchen and bathroom)–I scrubbed the shower and I vacuumed my car out. I love my cats but I hate the amount of cat hair that sticks to my car seats and clothes. It felt good to get both chores done though.

After the chores, I treated myself to some relaxing time in the kitchen. I was reading blogs on Google Reader and Julie’s almond butter granola caught my eye. I had some Trader Joe’s almond butter to use up in the fridge, so I figured I should whip up a batch of granola.

It turned out ok. I think where I went wrong is using up the bottom of the almond butter jar. It didn’t blend together as well as I had hoped, even after melting the honey and almond butter together. I kind of like the clumps that I got as a result though.

I had granola with milk for breakfast this morning.

Once I got to work this morning, I sort of regretted taking off for two days last week. My e-mail box was full & I felt overwhelmed and stressed all day. Then, I had a new intern beginning today and had to prepare for her 8:30 start time. I got things sorted out for her first day and she did very well. I love when interns impress me right away because I can usually tell that they’ll work out within the first day. I have one more intern starting on Wednesday and I think she’ll be great too. Coming up with tasks for someone else is always so stressful for me. Glad I am not a manager! Enough about work. Let’s move on to more fun things like lunch, even though mine was pretty normal.

The good thing about being busy today meant that I didn’t have time to snack mindlessly. The bad thing? I didn’t drink much water.

I drank this whole tea when I got home from work because I felt super dehydrated. Loved this flavor! I am bringing a huge container of it to work tomorrow for an intern luncheon. Glad I didn’t offer to cook anything because I am too tired tonight.

Dinner was the pomegranate Chobani pictured above, a veggie masala burger without a bun, and a Soy chocolate mini ice cream sandwich from Trader Joe’s.

After lounging a bit and meditating, I got my tired butt to the gym. I lifted some weights, rowed for 11 minutes and walked on the treadmill. My bad ankle was really bugging me during the end of my rowing session, so I took it easy the rest of the time. Going to the gym lifted my Monday blues, as always. Love that I can count on the gym, my wonderful husband and seeing my cute cuties to always do that.

Take Steps, Be Heard walk recap

Happy Monday everyone!

Yesterday afternoon, I met my friend Danielle and her daughter for the Crohn’s Disease and Ulcerative Colitis walk at Miller Park in Milwaukee. It was a beautiful day for a walk in the Menomonee Valley!

We were fed hot dogs, pita chips with sea salt and gatorade.

Danielle’s daughter was hamming it up for the camera. She was fun to be around, but is sure independent and feisty! She’s nearing 2, so Danielle said that the closer she gets to it, the more sassy she becomes.

We walked about 3 miles, or so I think. It took us 45 minutes, so that sounds about right. We walked at a fast pace, even though Danielle is pregnant and had to push the stroller.

The walk had a pretty good turnout, which is great because researchers need to find a cure for digestive diseases! It was fun seeing all of the t-shirts like “semi-colon” and “we’ve got guts.” I really feel at home around others who have Crohn’s or Colitis and around the doctors that care for us. It’s nice to be able to relate since I don’t know that many other people with Ulcerative Colitis.

I enjoyed spending time with Danielle and her daughter. When they drove away and left me at the Target parking lot, her daughter was saying “Lisa bye bye.” Danielle called right away to tell me that and it made me happy because she is a fun kid to be around. Danielle said she doesn’t like everyone and she really warms up to me well. Aaww.

I slacked off today and didn’t take pictures of my food. It’s just getting kind of boring since my meals aren’t all that exciting lately!

But, I did come home to find something exciting in our hanging basket. Some of the strawberries were red and ready for picking!

Craig picked them for us and they tasted yummy. They are awfully small, so I am hoping they get a bit bigger as the plant grows.

The rest of our garden is thriving too. The plants have grown so much in only a week and our beans poked through over the weekend!

Did I show you what we did with our old toilet tank? We were silly and recycled it as a flower pot. It works, so why not recycle it instead of the tank ending up in a landfill. At least it’s not a toilet bowl in our front yard like I have seen up north!

Oh and Body Pump was fantastic yesterday, except that I cannot walk properly today! It killed my triceps, quads, thighs and butt. I luckily was able to borrow a co-worker’s foam roller today at work and it was marvelous. By the third time rolling, the front of my legs really hurt, but it felt so good on the back of my legs. That was my first time using a foam roller and I can see why bloggers are obsessed with them!

Now it’s time to meditate, grind some fresh coffee, and read The Help before bed. I need to finish it by Wednesday and I am only 70 pages away from the end. It’s a great story and I can’t wait to find out the ending.

Monday Monday

Oh Mondays, how I loathe you. Glad you’re almost over though.

I started off my day with chobani plain greek yogurt, chia seeds, wild blueberry preserves and Kashi summer berry granola. This seems to be my go to breakfast lately.

My sister-in-law Lisa has become my “Chobani dealer.” She works close to Woodman’s now and asks me if I need anything and each time she asks I say “two tubs of plain chobani please.” My mother-in-law tried some Chobani just plain yesterday and said it tastes like sour cream. I threw in some of my beloved Bonne Maman wild blueberry preserves and she loved that combo! May have hooked another person on Chobani!

Lunch was leftovers–pizza and quinoa. I didn’t eat all of that quinoa though. I saved the rest for more leftovers. I also had about 6 carrot sticks and gobs of dark chocolate covered almonds from TJ’s to comfort my Monday blues.

During my 15 minute and lunch breaks, I managed to read my Kindle and I have to say that I love the option to read so many different things. Sometimes I am just not in the mood to read a certain book, so I could preview a new one or read the Amazon Daily post. I downloaded lots of samples yesterday including The New Weightlifting Rules for Women and started reading the sample before bed last night. It sounds like a book I should buy a paper copy of. Love what I have read so far. Anyone out there read that book yet or started it?

I had an afternoon slump, so I ate half of a cherry pie larabar to see if that helped. Nope. Oh well, I tried.

Dinner was a Trader Joe’s chana masala veggie burger with jack cheese and I put it all on a TJ’s sandwich thin, which was awesome! Definitely getting those more than Arnold’s and if you remember from my post last week, their nutritional stats were better too. Had some strawberries on the side and munched on more fruit before dinner in the form of dried mango.

After dinner settled, I made my way to the gym. I walked on the treadmill for 34 minutes and logged 2.14 miles. I watched a new episode of Property Virgins on HGTV and ran very slowly (13:00 minute pace) during commercials. My ankle wasn’t irritated, but my body just felt off. I need to get back into running slowly so I can keep training for the 10k. Then I lifted some weights and left.

And now I am just chilling with an adorable cat by the name of Tanzi next to me and ready to go read my kindle some more. Almost halfway through The Secret Holocaust Diaries!

Injuries stink

There is no other way to put it, injuries are devastating. I managed to injure my ankle tonight while hopping off the treadmill. I had just run 2.85 miles in 33 minutes (walked part of that time as warm up/cool down). I felt fine the whole time on the treadmill. When I stepped off the back, my left ankle gave out on me. This is the ankle that has an old break in it from an injury that occurred about four years ago now. Amazing how it just keeps creeping back up. Anyway, I fell down to the ground and felt awful. The pain surged up my leg and I instantly was depressed about what had just happened. A nice guy lifting weights asked me if I was ok and I thanked him for asking. I walked it off and felt a little better. I also stretched and took off my shoe to see how it felt. The pain was really bad so I just decided to leave and get home ASAP to ice it.

Luckily I had a paradice pack in the freezer and a good nurse to help me feel better just by petting his cute little face.

Dinner: since my foot was killing me, I warmed up the rest of the beer battered tofu and chowed down. I also had Stonyfield plain yogurt with Kashi cocoa granola and chia seeds.

My goal is to read A Homemade Life or an e-book tonight and catch up on my google reader, so off I go.

Babysitting blues

I didn’t have the best experience babysitting my nephews last night.

Let’s just say they were awfully naughty and one of them even ended up in time out twice. I am glad my brother and sister-in-law got out of the house and were able to go to dinner with friends.

We also played Sorry, which I was sorry we did because the 5 year old didn’t want to follow the rules.

I guess my attitude wasn’t helped by the fact that I was very sick with tummy troubles.

I had a banana to eat there. I traded my usual placemat for eating at my nephew’s. :)

I also had a Dannon vanilla yogurt and a peanut butter sandwich later on at night when the 5 year old wanted to eat at 9 p.m.

This morning, my stomach still hurt, so breakfast was somewhat simple. Just Honey Nut Cheerios and coffee.

Then I hit the stores for some food. I went to a very busy Sam’s Club and ended up with some good deals. I picked up Chobani yogurt, Bolthouse Farms Strawberry Banana juice, chicken and beef fajita strips for Craig, feta cheese, Stacy’s pita chips, tortilla chips, strawberries and raspberries.

I was really disappointed because I went to a Pick N’ Save (grocery store) that didn’t carry any organic yogurt. I asked a store person if I was just missing the separate section and she said they didn’t carry any. How weird that most Pick N’ Saves separate organic dairy from the rest anyway. I told her “probably this market, huh” and she agreed. Guess West Allis isn’t an organic market yet! I had some Stonyfield coupons from an Earth Day e-mail I got yesterday and I went to the store all excited to buy some yogurt. Oh well! Guess I won’t be going to that location too often.

Whenever my colitis acts up, I am super hungry for days. I was ready to have lunch right away when I got home, so I made a salad with cucumber, red pepper, tomatoes, & feta cheese. I also had a strawberry Chobani and added fresh strawberries, Bonne Maman wild blueberry preserves, and Kashi Summer Berry granola to it.

Time to get something done here. Or I should really force myself to read a magazine and relax! I have been going non-stop the past two days. I plan to go to the gym later and then to watch Eat Pray Love tonight.

Rainy day=comfort coffee

It’s slowly getting warmer here, but the rainy weather today made me crave comfort food again. I can’t wait until it’s in the 70′s this weekend!

Breakfast was grape nuts and strawberries. I have determined I don’t really like grape nuts, but the fiber is good for me. I would rather use them in granola bars and other recipes than eat the cereal for breakfast.

Snack at work was an almond latte, halva and half of a KIND bar. This rainy weather we are having is making me crave lattes.

Lunch was a wrap with ham, cheddar cheese, tomatoes, spinach and mayo. I paired it with a Chobani pomegranate yogurt. Dessert was the other half of the KIND peanut butter and dark chocolate bar.

Dinner was half of a vegetarian burrito from Qdoba. I didn’t feel like making anything at home, plus I wanted to go to the store for some fresh produce, so off we went to Qdoba.

Because I wanted to run to the grocery store after work, I decided to take off from the gym tonight. I didn’t want to feel rushed like I always do and besides, a rest day will do me some good. I need to catch up on Animal, Vegetable, Miracle since the book discussion at the library is in a week! Oh and I want to bake the ultimate comfort food–chocolate chip cookies!

I am excited because I only have about a half day of work tomorrow! The art museum is free on the first Thursday of the month, so I am going there to visit the Frank Lloyd Wright exhibit in the afternoon. I love his designs and I am hoping it’s a great exhibit. I am rarely disappointed by any exhibits the museum puts together though.

Digestive Health

Last week, Anne posted a question on her blog asking “what does digestive health mean to you?” Having Ulcerative Colitis, I thought it was important for me to share my experience and comment.

Today, I saw that my comment was posted as one of seven on the attune foods blog. I am so honored to have my comment posted! Check it out! Thanks for including me and my digestive health story Anne. :)

In case you don’t want to click ahead, here is what I wrote on her site in response to her question:

“I have ulcerative colitis, so I think about digestive health every day (especially on days like today when I feel bloated and constipated). Up until a couple of years ago, I really ate whatever I wanted and started realizing what my “trigger” foods were, such as dark meat and soda. I cut those out of my diet and felt better. Then, I transitioned to eating more whole foods, made exercise a priority in my life and I instantly felt better. Also, digestive health for me means eating lots of yogurt for the probiotics! I tried the attune bars and they work well too!”

So I will now pose it back to my readers, what does digestive health mean to you? Anyone else out there deal with an Irritable Bowel Disease like I do?

Eek! Meditation this morning got moved to another room in our house because of a centipede lurking in our spare bedroom. I love spring but I hate the centipedes that invade our house with the warmer temps! I seriously scream at the top of my lungs when I see them. I have a big fear of bugs (spider and centipedes) and snakes. Any bugs that you fear?

Breakfast was a mini bagel with an egg white, cheddar cheese and Frank’s red hot. It’s kind of killing me to eat these white bread bagels instead of wheat, but I figure they are mini and they have to eaten up! I also paired it with some strawberries on the side.

No snack at work (I am trying to cut back on morning snacks), unless you count an almond latte.

Lunch was a peanut butter and jelly sandwich, a lemon Chobani, some pita chips and another halva. I think I spelled the name wrong yesterday, oops. Sorry about that!

Dinner was a Morningstar black bean burger on an Arnold’s Thin with some provolone cheese and then some brussell sprouts on the side.

After dinner, Craig and I went to vote in a local election and the polls were dead. I always feel like I have to exercise my right to vote because of all of the women who fought for this right and won it!

Then I quickly changed and got to yoga class. It felt good to practice, per usual.

My goal was to get this post out there and done early so I could go read my book, so that’s what I am sticking to. Night!

Gardening class, massage, and work

Sometimes it’s just more difficult to post on the weekend, so here’s my recap of the last two days.

On Saturday morning, Craig and I went to a “Grow Your Own Groceries” workshop at the Zablocki library.

It was totally free and a really good class. I definitely feel like I’ll be more passionate and ready for gardening season to begin. We learned about pests, composting, when to start planting in our area, soil composition and other tips about gardening. We are going to container garden again this year because it worked well for us last year. Someday, it would be nice to have a raised bed.

We even picked out a bunch of seeds at the end of class!

Saturday’s breakfast was a mini bagel with egg whites, provolone, and Frank’s Red Hot. I also had some Chobani plain yogurt with blueberry preserves.

On the way back from our class, I snacked on a Larabar because it was nearing 12:30 and I was hungry!

Lunch was a ham, cheddar, spinach, tomato, and oregano panini and strawberries.

After lunch, I went to the Aveda Institute of Beauty and Wellness for an hour long massage. They just moved to a new location and it was really hip, yet relaxing inside.

Unfortunately, they were running late and I didn’t get into my appointment until about an hour after it was scheduled for. The masseuse I had made up for it because she did a fantastic job. I asked for deeper pressure and I got it. The interesting thing was when she told me I had crystals in my feet. That could mean many things, but it could have to do with reflexology. I guess I should rub my feet more and get the crystals out. She also said she could tell I work out a lot. My body wasn’t really that tight in areas though.

We had dinner late and I was in the mood for pasta, so I made some rotini that has servings of vegetables contained in it. This was for my husband’s sake more than my own.

I made some Nature’s Pride toast, cut it in half, and covered it with earth balance and garlic powder.

We watched part of the movie “The Town” last night and finished the other half tonight. It was better than we both expected.

This morning’s breakfast was plain old Cheerios with some coffee. It’s going to be hard, but I may stop using half and half in my coffee when it runs out. I think it will be better for me, but I also just have to get used to the taste of black coffee.

I also had a bite of a cashew cookie Larabar before going to the YMCA.

I had a really good workout. I stayed for an hour and a half and felt like I could have done more, had I had the time.

I biked for 15 minutes while reading Health; lifted weights and can tell I am getting stronger because my old settings seem too light; ran on the treadmill and felt really good doing that; rowed for 6 minutes and then stretched.

After stretching, I looked outside and thought it was snowing. Then I saw the huge chunks falling from the sky and realized it was hail. We got a really bad hail storm today. It was not fun to drive home on and felt like a fresh coat of snow and ice.

I was hungry when I got home! I had an egg white with cheddar on a mini bagel and made an awesome chocolate banana protein smoothie.

I was still hungry before going to work this afternoon, so I had a raspberry chobani yogurt. It was my first time trying raspberry and it didn’t disappoint!

I worked an event for almost three hours and then got of there because I was itching to be home.

We made pizza for dinner–boboli with mozzarella, pepperoni, and I added spinach and broccoli to my half.

Only two pieces for me so I can save the rest for my work lunch tomorrow!

Well, it’s getting late and I need to clean the house a bit before going to bed early. If I learned anything from last Sunday night, it’s that I need to get to bed earlier on a Sunday so I don’t feel tired and cranky on a Monday.
