Beautiful Saturday for a B-day Cookout

Good afternoon! It’s a beautiful, sunny Saturday here in Southeastern Wisconsin. Probably nothing like the weather they are experiencing on the East Coast right now.

After clocking out of work at 12:05 a.m. and not getting to sleep until about 1 a.m., I slept in this morning, meditated, and went for a long walk with Craig. My legs were really sore from walking about 5 miles at work last night, but I think the walk actually helped a lot.

I really wanted to make it to the Eat Local Resource Fair at the Urban Ecology Center in Milwaukee, but walking around at a fair and being so tired after work last night didn’t sound like it would mix too well. Plus, I didn’t want to feel so rushed today.

So instead, I painted my nails this morning.

Eek, my nails/cuticles look like they need a proper manicure. Hmm…maybe on my b-day on Wednesday?

Got excited to check out the package I received yesterday.

I won some Cascal fermented soda from Jessica at Healthy Living in America’s Dairyland. Never tried it before, but I will definitely let you all know how it is or you can head over to Jessica’s site to check out her opinion.

Then we went to Barnes and Noble to get my nephew a gift card. I’m glad he is getting into reading and I want to encourage it with this gift card. I definitely was very into reading at his age (going into 2nd grade) and now I am a lifelong reader. It also helped my spelling skills!

And to the grocery store to pick up some good deals.

I picked up two Protein Plus PowerBars that ended up being totally free with coupons I found in Women’s Health magazine.

I used a $1.50 off coupon for some Seattle’s Best coffee.

And I used one of my free Chobani coupons the company sent after I had a bad experience with a raspberry flavored yogurt a couple of weeks ago. Great customer service on Chobani’s part–I was impressed. Now I get to have one of my favorite flavors, pomegranate, for lunch this week.

I’m quickly writing this post while watching America’s Test Kitchen. It’s an episode focused on chicken, which is sort of grossing me out. I still like learning things from the show though, even when it is very meat based cooking featured most of the time.

We’re off to a cookout for my nephew’s 8th b-day party this afternoon! Can’t wait to sit outside and enjoy a hamburger. I think this flexitarian is actually going to have a burger and hope it doesn’t affect my stomach. I have been craving meat all week.

A busy Monday

Rewind to yesterday afternoon/last night. I accomplished what I consider the two worst chores (besides mopping the kitchen and bathroom)–I scrubbed the shower and I vacuumed my car out. I love my cats but I hate the amount of cat hair that sticks to my car seats and clothes. It felt good to get both chores done though.

After the chores, I treated myself to some relaxing time in the kitchen. I was reading blogs on Google Reader and Julie’s almond butter granola caught my eye. I had some Trader Joe’s almond butter to use up in the fridge, so I figured I should whip up a batch of granola.

It turned out ok. I think where I went wrong is using up the bottom of the almond butter jar. It didn’t blend together as well as I had hoped, even after melting the honey and almond butter together. I kind of like the clumps that I got as a result though.

I had granola with milk for breakfast this morning.

Once I got to work this morning, I sort of regretted taking off for two days last week. My e-mail box was full & I felt overwhelmed and stressed all day. Then, I had a new intern beginning today and had to prepare for her 8:30 start time. I got things sorted out for her first day and she did very well. I love when interns impress me right away because I can usually tell that they’ll work out within the first day. I have one more intern starting on Wednesday and I think she’ll be great too. Coming up with tasks for someone else is always so stressful for me. Glad I am not a manager! Enough about work. Let’s move on to more fun things like lunch, even though mine was pretty normal.

I had TJ’s pizza, salad, and strawberries for lunch.

The good thing about being busy today meant that I didn’t have time to snack mindlessly. The bad thing? I didn’t drink much water.

I drank this whole tea when I got home from work because I felt super dehydrated. Loved this flavor! I am bringing a huge container of it to work tomorrow for an intern luncheon. Glad I didn’t offer to cook anything because I am too tired tonight.

Dinner was the pomegranate Chobani pictured above, a veggie masala burger without a bun, and a Soy chocolate mini ice cream sandwich from Trader Joe’s.

After lounging a bit and meditating, I got my tired butt to the gym. I lifted some weights, rowed for 11 minutes and walked on the treadmill. My bad ankle was really bugging me during the end of my rowing session, so I took it easy the rest of the time. Going to the gym lifted my Monday blues, as always. Love that I can count on the gym, my wonderful husband and seeing my cute cuties to always do that.

It’s late, so I am going to sign off!

Taxes are done!

We had a storm come through last night, just as our bedtime rolled around, and it made for a very sleepy day! Glad to have the warmer temps, but not the thunderstorms that keep me awake!

Breakfast was plain non-fat Chobani with almonds and honey.

Snack at work was a peppermint tea and a Pecan Pie larabar.

Lunch was a peanut butter and jelly sandwich on an Arnold’s Thin, a pomegranate Chobani, an apple, and a clementine.

On my break, I read Crazy Sexy Diet and as I found when I was reading it before bed last night, I am really enjoying Kris Carr’s writing and am learning a lot from her! I knew nothing about pH levels before reading the last couple of pages.

I left work somewhat early to make it to a 4:30 class at the Y. Ultimate Intervals class was good. It used to be called Boot Camp, but they changed the name and we have a new teacher. You see, I didn’t attend Boot Camp for the last couple of months because I really hadn’t cared for the last teacher. The one we had today was enthusiastic and had good stations set up. It’s tough to make the class time though. I wish it was at 5:30 instead. We’ll see how often I attend because Mondays are busy for me at work.

Dinner was red quinoa, feta, tomatoes, kalamata olives, roasted red peppers, sea salt, and some spices.

After dinner, we meditated and then Craig and I finished our taxes and submitted them! Phew. One thing that we learned from doing them was that we aren’t so savvy with finances. We are good savers, but we don’t know how to invest our money. So, this prompted a new goal for 2011: take a financial class together so we are more financially savvy!

From finances, back to food–my sister-in-law is starting a new full-time job on Monday and she’s not used to bringing a meal to a workplace. I gave her some advice in an e-mail and told her to check out my blog.

Question for you readers: any tips for my sister-in-law on making healthy brown bag lunches?

My tips were to prepare veggies, etc. on Sundays and to cook extra of a meal and save some for work leftovers. I also said that fruit often fulfills my sweet tooth (like it did today) and that way I guarantee I get my fruit in for the day too.

Busy, but productive Saturday

As my title says, it was a very busy day by choice, but felt so nice and productive. At about 6:20, when we were sitting down and having dinner together, I said to Craig, “wow, this day went by so slowly, but in a good way because I got so much done.” Love those kind of days!

I woke up, meditated and then had a craving for oatmeal, so that’s what I made.

I wanted to go to yoga, but by the time I ate, it was getting late and I was SO full from the oatmeal. I decided to stay home instead and clean. I was in one of my cleaning moods, so I threw laundry in, dusted, washed dishes, cleaned counters and the kitchen table, vacuumed, swept and got the kitchen ready for mopping. I managed to read my book in between cleaning too.

I wasn’t too hungry for a “real” lunch, so I had a pomegranate chobani and a triple chocolate chunk vita top.

The vita top was delicious, as expected! Very chocolaty!

Then I was off to Craig’s grandma’s 90th birthday party. I went late, after the meal was over, because I really didn’t want to pay $15 to have the meal choice they offered and there was no vegetarian option. They had fried chicken, ham, mashed potatoes, green beans, etc. I wouldn’t have enjoyed the meat and it probably would have upset my stomach. I just had a few bites of birthday cake.

After the party, I headed to Pick N’ Save to get some groceries on double double coupon day. I could double 10 coupons, which was great because we needed oatmeal, cereal, clementines, olive oil, etc. and I was able to save a lot of money today.

Then it was time to mop the floors! I really hate this chore more than any other in the house. It takes so much time to clear everything out and we just have a small kitchen and bathroom!

Seeing shiny, clean floors made me happy though.

I felt like the energizer bunny today. The next thing I did was lace up my running shoes and get outside for a 15 minute run.

It felt so good to run outside opposed to the treadmill. I just wish I had a garmin to see what my pace was and the distance I completed. I know they aren’t that much money, but I am not sure it is worth the investment for me. Especially because I couldn’t use it at the gym in the winter.

Clearly this is a (shiny) face of a very happy blogger who can get outside and run, at last!

Because I didn’t go to the gym, I decided to lift my 8 lb. weights too.

Dinner was delicious. Every time I make a quinoa dish like this, I just go “mmmmm” throughout dinner. I made mine with kalamata olives, roasted red peppers, tomatoes, tomato basil feta cheese, dried basil and mural of flavor from Penzey’s spices, olive oil and balsamic vinegar.

When I saw this flavor at the store today, I knew I had to try it in the quinoa dish.

And after dinner, Craig and I went on a long walk around the neighborhood. It was nice to see flowers coming up and some even had bloomed already! They’re really going to go into action tomorrow when it’s in the 70’s.

Right before I started blogging this post, I ate a skinny cow cookies n’ cream ice cream sandwich.

Time to finish reading Animal, Vegetable, Miracle. I am almost done!
