3 years

I have been at my current job for three years as of today. Can’t believe I have worked somewhere that long, but then again, my husband has been at his company 11 years now and that’s amazing for a 30 year old!

Breakfast was Chobani vanilla greek yogurt, fresh strawberries and chia seeds. I was so full after this meal!

Snack at work was an almond latte, grape tomatoes and string cheese.

Lunch was beer battered tofu, a raspberry Stonyfield yogurt with fresh raspberries on top, and an unpictured piece of birthday cake (it was my co-worker’s birthday today).

I still haven’t been feeling good and contemplated leaving work early this afternoon. I stuck it out though. I may end up calling in sick tomorrow if this stomach stuff keeps up.

And that’s all folks. It’s a short post for today. I have to go rest and read a book. I started A Homemade Life and I really like it so far. Oh and I might get a bit distracted by the royal wedding excitement currently on TV. čÖé I am excited to see what Kate wears!

I was a slacker and didn’t post yesterday. Is it wrong that instead of blogging last night, I drank a hard cider with dinner, kept drinking and then watched Toy Story 3 with Craig? It was one of those Mondays where drinking was required and so was sitting on the couch. Let’s just say vacation can’t come fast enough!

These were my eats from Monday:
danish, coffee, granola

Lunch’s main dish was Skillet Gnocchi with Chard and White Beans. My mother-in-law made it and other in-laws brought it over for me to try on Super Bowl Sunday. She thought I would like it and she was right. It was so delicious. I have the recipe, so I will have to make it sometime and share the details.

I had a major craving for peanut butter last night, so I had a thin with natural pb and reese’s pb chips for dinner.

Plus a salad and the start of my cider drinking!

I am happy to report that today required no drinking after work, just a joyful trip to Target. I swear that shopping at Target always puts me in a good mood. The Target on my way home from work is expanding their food section, so I was super excited to see that change.

So, today, I had a strawberry frozen waffle for breakfast.

coffee, strawberry waffle

Before going into a meeting, I snacked on this bar.

Lunch was roasted veggies with rice, a side salad with grape tomatoes and feta cheese, and the last of the attune probitoic bars.

I have had an attune probiotic bar every day for two weeks straight. I am not sure if I noticed a huge difference, but I think I have felt better in my tummy over the last couple of weeks. They have been stressful weeks and sometimes stress makes my stomach go wacky. I liked the flavors of both bars and they were a nice treat to have with my lunch every day. Thank you to attune for sending me the bars to try out!

Dinner was Boboli Whole Wheat pizza crust with mozzarella, spices and grape tomatoes.

I hit the gym about a half hour after dinner and I swear that I never feel great when I workout after eating dinner. I always feel so slow and full!

I biked for a little over 16 minutes and read Fitness magazine. I rowed for five minutes, lifted leg weights, free arm weights and ran/walked about a mile around the indoor track. I guess I accomplished a lot even though I didn’t feel perfect.

Good news–I think I’ll be able to blog from our trip. I didn’t want to bring around my big iBook, but may get to use a netbook and post when our schedule allows for it! It will be fun to share our Florida adventures with you all!

Night all!

A good day

Despite being disappointed about Boot Camp class yesterday, I am sore in my legs today. I credit the squats we did in warmup and the squats I did with a heavy medicine ball on the bosu.

Breakfast was a fried egg on an English muffin and some cantaloupe on the side. The cantaloupe tasted so good. I cut it up before bed last night and couldn’t stop eating it!

coffee, egg sandwich, cantaloupe

Snack at work was a hot chocolate and a few raw almonds.

Lunch was minestrone soup and I threw some pita chips into it, which reminded me of tortilla soup. I love tortilla soup and really should make it at home sometime because Craig likes it too. I also had some grape tomatoes and a pink lady apple. Lots of red foods going on for my lunchtime eats!

lunch 1-25-11

I had an afternoon snack of Yogi green tea kombucha and a small square of dark chocolate.

I had quite the sweet tooth today! Upon arriving home, I needed a piece of Newman’s Own Organics tangerine licorice.

Dinner was a whole wheat tortilla with salsa, tomatoes, lettuce, pinto beans, taco flavored shredded cheese and some Penzey’s A Mural of Flavor spice sprinkled on top.

After dinner, I had a bowl of Neopolitan ice cream.

I was craving peanut butter and had some Reese’s pb chips. Told you I had a sweet tooth tonight!

Yoga tonight was great. My favorite teacher was back! He just radiates positivity, which is what I need during my work week! My friend Angie had never had class with him and she also noticed that he is so happy. My body was sore, so the stretching felt wonderful.

Now I am watching a travel show about Amsterdam and the Netherlands in general and remembering our honeymoon in Europe, wishing I was going back there soon.

We visited Amsterdam after being in a couple of German cities. We both got really ill on our second day there, especially my husband. I remember going through the Van Gogh museum feeling ready to faint. I was so happy to have seen the Almond Blossom painting though because it is one of my favorite paintings of all time.

At least we got to the Anne Frank house before feeling totally sick on that second day. I loved seeing where her family lived. Seeing her diary and her room brought me to tears though.

Oh, these darn travel shows! I have the itch to travel to Europe again. Or maybe our next big trip will be a tour in India?

I am getting my haircut tomorrow morning! It’s been three months since my last cut and my hair is getting super long. I’ll post before and after pics tomorrow. I am also getting my hair highlighted on Saturday, so I’ll feel all refreshed again after this weekend.

All in all, it was a good day. After a not so great Monday, I was happy to be productive, yet not stressed all day.

Brrr, it’s cold outside & a perfect day for soup

It’s a soup kind of day…with temperatures the coldest they have been all winter, my body craved soup this morning.

So, I pulled out some Minestrone from the cabinet and packed it for lunch.

I also had some grape tomatoes, pita chips and a chocolate chip cookie.

Breakfast was Jessica’s granola again. I can’t get enough of the stuff!

Morning snack was about 5 or 6 dried apricots and a Yogi green tea kombucha.

I got a big craving for chocolate mid-afternoon (blame it on the long email I had been writing compiling lots of stats and comments).

So it was off to the candy shop at my work. It was either milk duds or a $7.00 bar of chocolate that the cashier said was “just ok.” Milk duds it was!

When I got home from work, I found another package on our doorstep. It wasn’t something I won, but a package from Amazon which contained a yoga book for my husband and this book for me to read on our trip to Florida:

The Omnivore's Dilemma by Pollan

Karma wanted to read the new David Sedaris book because it’s about animals. I still have to finish the Larsson book, but will get started on Sedaris soon and just read two books at once. I need a funny book after this rough and tiring week! David Sedaris was on CBS Sunday Morning a couple of weeks ago and that man just cracks me up. I think I have read almost all of his books and my favorite is Me Talk Pretty One Day.

I finally made a quinoa dish for dinner tonight. It contained TJ’s organic quinoa, grape tomatoes, chickpeas, feta, mozzarella, dried basil, garlic and a few Penzey’s spices. I topped it with olive oil, balsamic vinegar and a little sea salt. Every time I eat quinoa, I think to myself, “I need to eat this more, it is so good.” I love it’s versatility. I don’t think I have ever made the same quinoa dish. I just use whatever ingredients we have that go together well.

My picky eater husband even ate it! I think this is the first time he has ever had chickpeas. I told him they didn’t really taste like anything particular and he bought it.

And because I can’t stay away from this stuff, I had more of Jessica’s granola for dessert tonight.

Then it was off to yoga. My favorite teacher still wasn’t there tonight, but we had the teacher whose class I go to on Saturday mornings from time to time. Class was empty, but the gym itself was packed. Probably the most packed it has ever been since I have been going there for four months and I was surprised because the wind chill is probably in negative temperatures tonight.

Time to start reading the first chapter of the Sedaris book called “The Cat and the Baboon.”

Tomorrow, I’ll be blogging in the morning if I have time. I have to work mid-afternoon until midnight. Probably an eleven hour day and I am on my feet for so much of that time. After these particular events, I am just so tired all weekend and achy.

Snowy afternoon

The roads were nice and quiet driving into downtown Milwaukee this morning. For those of you who were off, hope you had a nice day. Maybe you even volunteered your time in honor of MLK’s philosophies. A lot of people seemed to be off for MLK day. We consider MLK day a minor holiday at my work and I earn holiday hours, but everyone seems to go in.

I started my sleepy Monday with Kashi Autumn Wheat cereal and coffee.

Snack at work was a handful of raw almonds and another cup of coffee. I was tired this morning because I didn’t get to bed on time last night. Blame sleeping in on the weekend for making my schedule wacky. I’ll get back on schedule tonight and read before falling asleep around 9:45.

Lunch was a Morningstar black bean burger, a Stonyfield Strawberries and Cream yogurt (yum, loved this flavor) and some grape tomatoes. I still had a craving for something sweet, so I had a sugar free caramel pudding.

Loved this quote on the inside of my Stonyfield lid. Reminds me of the portion distortion class I attended in the fall at the YMCA.

I wish I had been off today because on my way home, my little Honda and I had to battle the snow storm. I went really slow and took the freeway home because it was much clearer than our sloppy side roads. My car just doesn’t like the slushy roads.

Once home, I shoveled so my husband could pull in the driveway and then he finished the rest when he got home. I was hungry for dinner and it had to be quick, so there went my plans for quinoa with tofu, chickpeas, tomatoes, etc. I made some fettuccine alfredo and had carrots and grape tomatoes with it.

I rested a bit, did some dishes and then did an indoor workout with EA Sports Active 2 on the Wii. There was no way I was heading back out to the YMCA on a night like tonight.

Time to read some blogs, the Larsson book (it’s getting really good now) and get to bed early tonight.
